Italian Roasted Potatoes

Italian Roasted Potatoes are a delicious, easy and versatile side dish! This will go great with almost any main course!

  • 8-9 medium potatoes of your choice washed and but into bite size pieces (if you use small potatoes increase the quantity)
  • 1 packet Zesty Italian Dressing Seasoning Mix found in the dressing aisle
  • 3-4 Tablespoons of Extra Virgin Olive Oil
  • Shredded Parmesan Cheese optional


  1. Preheat oven to 350 degrees F.
  2. Wash your potatoes and cut them into small bite sized pieces.
  3. Place potatoes in large ziploc bag and pour the olive oil and the Italian seasoning mix into the bag.
  4. Mix the oil, seasoning and potatoes together in the sealed ziploc bag until all the potatoes are covered evenly in oil and seasonings.
  5. Now you will put the potatoes onto your baking pan in a nice layer.
  6. Bake the potatoes for 20 minutes and then take them out and move them around in the pan with a spatula.
  7. Return to the oven and bake for another 15-20 minutes depending on how "done" you like your potatoes.
  8. Remove from oven.
  9. Sprinkle with shredded parmesan cheese now if desired.
  10. Enjoy!

Recipe Notes

Tips: remember you can use any type of potato you may have on hand. You can make clean up easier by lining your pan with non-stick foil!
