Ingredients

  • 4 lbs Boneless Skinless Chicken Breasts
  • 20 oz Can Pineapple Chunks in Juice
  • 2 tbsp Honey
  • ¼ cup Low Sodium Soy Sauce
  • 1 tsp Smoked Paprika
  • ½ tsp Salt
  • Pinch Crushed Red Pepper Flakes Optional
  • 1 Red Bell Pepper Seeded and cut into 1 inch pieces
  • 2 tsp Freshly Chopped Cilantro

Instructions

  1. Prepare slow cooker with nonstick cooking spray. Place the chicken breast into the bottom of the slow cooker.
  2. Pour the pineapple chunks over at the top of the chicken.
  3. In a medium bowl, combine the honey, soy sauce, smoked paprika, salt, and red pepper flakes. Pour the sauce over the top of the pineapple and chicken.
  4. Cover the slow cooker and cook on low for 6 hours.
  5. Remove the lid and add the red bell pepper. Cover and continue cooking for approximately 30 minutes or until the red bell pepper is at desired tenderness.
  6. Serve the chicken with the pineapple chunks and red bell pepper, sprinkled with fresh cilantro
