IS IT OKAY TO PUT RAW CHICKEN IN A SLOW COOKER?

Yes, as long as specific measures are taken to guarantee that the chicken comes to an ideal internal temperature that eliminates any harmful bacteria. Here are some guidelines to help you out:

LAYERING

For a more proper cooking, it's an excellent idea to layer the chicken in the slow cooker if you're using a big piece or multiple pieces of chicken.

COOKING TIME

Be sure that you cook the chicken until the internal temperature reaches a safe level. For maximum bacterial eradication, the USDA advises cooking poultry to an internal temperature of 165°F (74°C).

THAWING

Before adding frozen chicken in the slow cooker, it is advised to thaw it in the fridge. This guarantees more evenly cooked food and lowers the chance of bacterial growth.

DOES PINEAPPLE JUICE TENDERIZE CHICKEN?

Bromelain in particular, an enzyme found in pineapple juice, may be used to tenderize meat, which include chicken. In order to soften the muscle fibers in chicken and make it more tender, bromelain breaks them down. There are some considerations to make, though:

MARINATION TIME

Although pineapple juice can make chicken more tender, letting it sit in the juice for too long can make the chicken too mushy or soft. Typically, 30 minutes to a few hours of soaking is enough.

ACIDITY

Citric acid and bromelain, which are both present in pineapple juice, cause it to be acidic. Although this acidity can aid in the tenderization of meat, prolonged contact with the acid can start to “cook” the chicken, resulting in a mealy texture. It's crucial to avoid marinating the chicken for an excessive amount of time.

BALANCE

When using pineapple juice as a marinade, it's beneficial to add various spices to compensate for the sweet and sour flavors and produce a well-balanced flavor profile.

COMBINING OTHER INGREDIENTS

Pineapple juice can be combined with hoisin sauce, ginger, garlic powder, brown sugar, and other herbs and spices to make a tasty marinade that enhances the flavor of the chicken.
