Ingredients

  • 3 lbs boneless skinless chicken breast cut into chunks
  • 1 ½ cup all purpose flour
  • 1 cup dill pickle juice
  • ½ cup whole milk
  • 2 tbsp powdered sugar
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp paprika
  • 2 tbsp cooking oil

Instructions

  1. In a large bowl, combine the chicken pieces with the pickle juice. Cover, and marinate in brine in the refrigerator for at least 60 minutes.
  2. Preheat your air fryer to 375°F and coat the fryer basket with cooking oil. In a bowl, beat the egg and milk together.
  3. In a shallow bowl, combine the flour, sugar, salt, pepper and paprika. Dredge each Drained chicken nugget into seasoned flour, coating them well.
  4. Dip in the egg mixture, then into the flour mixture, pressing the mixture on to cover all surfaces. Repeat with remaining chicken.
  5. Place the chicken pieces in the basket of the air fryer. Brush with some oil and cook at 375°F for 5 minutes.
  6. Turn the chicken over and brush with some oil and continue cooking for another 5 minutes, until the chicken is a deep golden brown.
