Spicy Sausage Tortellini Bake

This quick and easy casserole has BOLD flavors and will have your family coming back for more!

  • 1 package of Jack Link's Wild Side Sausages Jalapeno Flavor
  • 20 oz package of cheese filled tortellini fresh or frozen
  • 10 oz can of red mild enchilada sauce
  • 15 oz can of fiesta corn
  • 10 oz can of diced tomatoes and green chilies
  • 2 cups shredded Mexican style cheese


  1. Preheat oven to 350 degrees F.
  2. First you need to cook your tortellini according to the package directions. I used fresh tortellini so it didn't take long to cook them. Be sure not to overcook the tortellini or they will be too squishy!
  3. Next you will take your Jack Link's Wild Side Sausage Jalapeno Flavor and cut them into thin slices. I cut mine about 1/2 inch thick. If you have young children who don't appreciate the BOLD flavor of the Jalapeno you can always use the Jack Link's Wild Side Sausage Original or Cheddar! I personally LOVE the unique flavor of the Jack Link's Wild Side Sausage Jalapeno Flavor for this dish!
  4. In a large bowl you will combine your tortellini, enchilada sauce, corn, diced tomatoes and green chilies and your sliced sausage. Stir this mixture up until well combined.
  5. Pour the mixture into a 9 x 13 baking pan. Top with your shredded cheese.
  6. Bake at 350 degrees F for 30 minutes.
