  • 16 ounces tri-colored fusilli pasta cooked according to package directions, rinsed, drained and set aside
  • 2 medium tomatoes seeded and chopped
  • 1 1/2 cups corn
  • 1 medium red bell pepper chopped
  • 2 green onions chopped
  • 19 ounce can black beans drained and rinsed
  • 2 cups finely shredded sharp cheddar cheese
  • 4 ounce can sliced black olives
  • 1 jalapeno pepper seeded and chopped

For the Dressing

  • 1 1/4 cups sour cream
  • 1 cup mayonnaise
  • 1/2 cup extra chunky salsa use whatever heat you prefer

  • 1/2 tsp ground cumin
  • 2 cloves garlic finely minced


  1. In a large mixing bowl combine the ingredients of the dressing. I like to use a whisk to make sure everything is well combined.
  2. Add all the remaining ingredients and gently combine using a large spoon.
  3. Cover with plastic wrap and set in the fridge to chill for at least 30 minutes. Keep in mind that the longer this chills, the better the taste. I like to make this the night before and let it chill overnight.
  4. Enjoy!
