These Weight Watchers-friendly cheesy zucchini muffins are a perfect savory snack that combines grated zucchini with sharp cheddar for a delicious, satisfying treat at just 5 points per muffin.

Ingredients

  • 1.5 cups of white whole wheat flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. garlic powder
  • 1 cup grated unpeeled zucchini--squeezed to release the extra liquid. This is about 2 medium zucchini.
  • 1/2 cup chopped parsley
  • 1/2 cup low-fat extra sharp cheddar cheese
  • 1/2 tsp. salt
  • 1 cup low-fat 1% buttermilk
  • 2 eggs
  • 2 Tbsp. extra virgin olive oil
  • nonstick cooking spray

Instructions

  1. Preheat oven to 400° F. Lightly coat a 12 cup muffin pan with nonstick cooking spray
  2. Coarsely grate the zucchini and sprinkle with 1/4 tsp. salt. Allow the zucchini to sit for 10 minutes then use paper towels to squeeze out the excess liquid.
  3. Whisk the flour, baking powder, baking soda and 1/2 tsp. salt together in a large bowl.
  4. In a small bowl whisk the eggs, buttermilk and oil together. Now fold the wet ingredients into the dry ingredients. Add in the zucchini, cheese and parsley until barely combined. A few lumps are okay.
  5. Divide the batter equally into the 12 muffin cups. They will be very full. Bake until the muffins are lightly golden brown and a toothpick test comes out clean. Typically this takes 23 to 28 minutes.

Recipe Notes

For best results do not overmix the batter.
