Ingredients

  • 19 oz frozen cheese tortellini
  • 10 oz fresh baby spinach leaves
  • 2 cans diced Italian style tomatoes
  • 4 cups of vegetable broth
  • 8 oz fat-free cream cheese

Instructions

  1. In your slow cooker you will add all ingredients EXCEPT the tortellini.  Cut your cream cheese into small cubes when adding it to the slow cooker.
  2. Cook this mixture on low for about 4 hours.
  3. Stir the frozen cheese tortellini into the mixture in the slow cooker.  Stir well so that your cream cheese is mixing in nicely.
  4. Cook for an additional hour or so on low or until your frozen tortellini are cooked.

Recipe Notes

I have seen this recipe read to add the tortellini at the beginning with all the other ingredients, but unfortunately, they end up MUSHY.  So unless you like mushy tortellini, I think it is much better to add them at the end of the cooking time.   :-)

The serving size is 1 cup. I got 10 cups when I made this.
