Ingredients

  • 1 pound extra lean ground turkey
  • 3 tablespoons Tamari sauce
  • 2 tablespoons apple cider vinegar
  • 1 gm stevia/erythritol blend 1 packet
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon fish sauce
  • 4 large cloves garlic crushed
  • 1 tablespoon ginger fresh, grated
  • 1 head butter lettuce
  • 1/4 medium red onion thinly sliced
  • 1 small carrot julienned
  • 1 scallion green and white parts, thinly sliced
  • 2 tablespoons roasted peanuts chopped
  • 1 lime cut into 4 wedges for squeezing on top

Instructions

  1. Brown the ground turkey meat in a large skillet over medium-high heat. This takes about 6 to 8 minutes, stirring occasionally with a wooden spoon to break up the meat.

  2. Add the tamari sauce, apple cider vinegar, stevia/erythritol blend, crushed red pepper flakes, fish sauce, garlic, and ginger and cook 2 minutes, stirring constantly.

  3. Spoon the meat mixture into lettuce leaves and top with the red onion, carrot, scallion, and peanuts. Serve along with the lime wedges for squeezing on top.

Divide the meat mixture evenly into 4 equal servings.
