Ingredients

  • 1 1/2 cup of Old Fashioned Rolled Oats
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon ground Cinnamon
  • 1/4 teaspoon ground Nutmeg
  • 1/4 cup of Butter softened
  • 1/4 cup of Light Brown Sugar
  • 1/2 cup of unsweetened Applesauce
  • 1 Large Egg
  • 1/2 teaspoon of Vanilla Extract
  • 1/2 cup of Dried Cranberries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix oats, baking soda, cinnamon, and nutmeg in a bowl and set aside.
  3. Cream softened butter and brown sugar until fluffy (3-4 minutes).
  4. Add egg, vanilla, and applesauce, beating for 2-3 minutes more.
  5. Incorporate oat mixture by folding gently.
  6. Let batter rest 5-10 minutes to thicken as oats absorb liquid.
  7. Fold in dried cranberries.
  8. Line two baking sheets with parchment paper.
  9. Drop tablespoons of batter about an inch apart.
  10. Bake 12-15 minutes until golden brown.
  11. Yield: 18-20 cookies
