- Baking Soda
- Ground Cinnamon
- Ground Nutmeg
- Butter
- Light Brown Sugar
- Unsweetened Applesauce
- Large Egg
- Vanilla Extract
- Dried Cranberries

HOW TO MAKE HEALTHIER CRANBERRY OATMEAL COOKIES
STEP ONE: PREHEAT AND LINE BAKING SHEETS
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large bowl, combine the rolled oats, baking soda, cinnamon and nutmeg and whisk together to combine.
STEP TWO: CREAM BUTTER AND SUGAR
Beat the soft butter and light brown sugar together until light and fluffy, about 3-4 minutes. Make sure your butter is at room temp but not melted for best results.
STEP THREE: ADD WET INGREDIENTS
Add the egg, vanilla and applesauce to your butter/sugar mixture and beat 2-3 minutes until combined. Don’t worry if it looks a bit curdled after adding the applesauce – that’s normal.
STEP FOUR: COMBINE WET AND DRY INGREDIENTS
Fold in the oat mixture into your wet ingredients until just combined. Don’t overmix. Let the batter rest 5-10 minutes to allow the oats to soak up some liquid and thicken the batter.
STEP FIVE: ADD CRANBERRIES AND BAKE
Fold in the dried cranberries and drop tablespoons of batter onto your prepared baking sheets, about an inch apart. Bake 12-15 minutes or until edges are golden brown, knowing the centers will firm up as they cool.
STEP SIX: SERVE
Transfer cookies to a plate and enjoy with a cup of coffee or tea!
