Grilled Mojito BBQ Chicken Tenders

  • 2 Tbsp grated lime zest 2 limes
  • ¼ cup lime juice
  • ¼ cup orange juice
  • 2 Tbsp chopped fresh mint
  • 1 Tbsp honey
  • 2 garlic cloves minced
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • ½ tsp salt
  • 1 pound boneless skinless chicken tenderloins


  1. In a small bowl combine the lime zest, lime juice, orange juice, mint, honey, garlic, oil, cumin and salt and stir to combine.
  2. Transfer half of the marinade mixture into a covered container and refrigerate until later.
  3. Put the remaining marinade into a large Ziploc bag and add the chicken tenders. Turn the bag around to totally coat the chicken and refrigerate at least 2 hours or overnight. Turn bag once in a while to keep the chicken coated.
  4. When you are ready to grill just remove the chicken from the bag it has been marinading in and discard the excess marinade from the bag.
  5. Spray grill rack with nonstick spray.
  6. Grill chicken turning over half way through. Grill until chicken is cooked thoroughly. Grilling times will vary based on heat of grill, thickness of chicken, etc.
  7. While the chicken is grilling put the remaining marinade in a small saucepan and bring to a simmer.
  8. Transfer the grilled chicken to a platter and spoon the warm marinade on top.

Recipe Notes

This recipe comes out to 2 Weight Watchers Freestyle SmartPoints per 1/4 pound. That would be if you used ALL the marinade. Since only about half is used I would count this as 1 point per serving.
