Grilled Mojito BBQ Chicken Tenders are really quick to throw together and make such a flavorful meal. It is grilling season, and if you are like me…I get a craving for more than just burgers and brats! How about a recipe that is perfect for summer? Did I mention that these are healthy? 🙂

Grilled Mojito BBQ Chicken Tenders
Lime is a great flavor during the summer months. The different marinade ingredients blend together perfectly in this easy recipe.Â

How to Make Grilled Mojito BBQ Chicken Tenders
In a small bowl combine the lime zest, lime juice, orange juice, mint, honey, garlic, oil, cumin, and salt and stir to combine.
Transfer half of the marinade mixture into a covered container and refrigerate until later.
Put the remaining marinade into a large Ziploc bag and add the chicken tenders. Turn the bag around to totally coat the chicken and refrigerate for at least 2 hours or overnight. Turn the bag once in a while to keep the chicken coated.

When you are ready to grill just remove the chicken from the bag it has been marinading in and discard the excess marinade from the bag.
Spray the grill rack with nonstick spray.
Grill chicken turning over halfway through. Grill until the chicken is cooked thoroughly. Grilling times will vary based on the heat of the grill, the thickness of the chicken, etc.

While the chicken is grilling put the remaining marinade in a small saucepan and bring to a simmer.
Transfer the grilled chicken to a platter and spoon the warm marinade on top.
Dinner is Served
If you would prefer to use regular chicken breasts for this recipe it will work too. You may need to double the marinade to have plenty for larger pieces of chicken.
These chicken tenders would look amazing served on a colorful ceramic platter!

Weight Watchers Points
If you are following the Weight Watchers program, this recipe is great!
The recipe is only 2 freestyle smartpoints per 1/4 pound of chicken. That would be if you ate ALL the marinade! Since only about 1/2 is used, I am calculating the recipe at 1 freestyle smartpoint per serving. Most of the chicken tenderloin packages I buy have around eight tenderloins. I used 2 per serving…but you can weigh the chicken if you want!
On the current Weight Watchers Program (2023), it is 3 points per serving. A serving is 2 tenderloins.

- 2 Tbsp grated lime zest 2 limes
