This Weight Watchers Instant Pot Black Bean Dip is extremely tasty and very low in points! Dip is addictive for me. I have to be really careful to pick a healthy dip so I don't feel bad if I go overboard! It can be hard to find a tasty Weight Watchers recipe for dips.

This recipe is definitely going on my list of Weight Watchers Cinco de Mayo recipes! Of course, we eat Mexican food weekly at my house….we don't need a holiday, lol. 

How to Make Weight Watchers Instant Pot Black Bean Dip

Rinse your black beans and put them in the Instant Pot liner.

Add onion, garlic, Rotel, lime juice, cumin, smoked paprika, salt, chili powder, and broth.

Lock the lid and set the vent to sealing.

Press the bean button and cook for 30 minutes on high pressure.

When Instant Pot beeps, let the pressure naturally release for 10 minutes followed by a quick pressure release.

Use an immersion blender to blend the ingredients until smooth.

Serve with your favorite toppings and chips.

I love that this recipe is packed full of nutritious black beans. It is high in fiber, and that makes it hearty and filling.

If you don't want to eat it with chips because of the high points and the tendency to overeat chips…you can spread some on a corn tortilla!  That is a really good and filling option too. 

This recipe makes about 6 cups of dip. I made each serving a 1/4 cup.

The Instant Pot Black Bean Dip is ZERO Points on all 3 myWW plans! So ZERO points for Blue, Purple and Green!  There is actually only ONE point for the entire recipe and that is from the vegetable broth.

On the current Weight Watchers Program (2023), it is 0 points per serving.

Ingredients
  • 1 ½ cups dried black beans
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 can Rotel
  • 1 ¾ cup low sodium fat-free vegetable broth
  • Juice of 1 lime
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • ¾ tsp sea salt
  • ½ tsp chili powder
  • Fat free shredded cheddar for garnish
