I am a huge fan of soup. I make Weight Watchers Chicken Enchilada Soup a lot and am always looking for healthy soup ideas. Weight Watchers recipes that are comfort foods without all the calories are my favorite kind!!

Ingredients for Instant Pot Potato and Shrimp Soup

  • corn
  • Light butter
  • garlic clove
  • yellow onion
  • flour
  • Vegetable Broth or Chicken Broth (Fat-Free)
  • diced potatoes
  • 1% low-fat milk
  • Bay leaf
  • dried Thyme
  • 16 oz Shrimp (peeled and deveined)

Directions for Making Instant Pot Potato and Shrimp Soup

  • First, set the Instant Pot to Sauté and add the butter, garlic, onions, and corn. Stir and cook until the onions are cooked.
  • Now it is time to add the broth and potatoes, thyme, and bay leaf.
  • Set Instant Pot to Manual for 15 minutes.
  • Once it’s done, add the milk, and flour, and stir. Add the shrimp and seal the lid back on the IP for a couple of minutes. You don't have to turn it on…the pot is still hot enough to cook the shrimp. Let the shrimp fully cook before serving.

This is also a really family-friendly meal! I usually leave the onions out and add onion powder…but that is because I am a little weird!

  • 1 can corn low sodium
  • 2 Tbsp. butter
  • 1 clove garlic minced
  • 1 medium yellow onion
  • ¼ cup flour
  • 5 Cup Vegetable Broth or Chicken Broth Fat Free
  • 2 cups diced potatoes
  • 1 Cup 1% low-fat milk
  • 1 Bay leaf
  • ½ tsp dried Thyme
  • 16 oz Shrimp peeled and deveined thawed
Instructions
  1. First set the Instant Pot to Sauté and add the butter, garlic, onions and corn. Stir and cook until onions are cooked.
  2. Now it is time to add the broth and potatoes, thyme and bay leaf.

  3. Set Instant Pot to Manual for 15 minutes.
  4. Once it’s done, add the milk, flour and stir. Add the shrimp and seal IP for a couple of minutes. You do not have to turn the IP back on. It is still hot and will cook the shrimp with the lid on. Let the shrimp fully cook before serving

  1. How many servings does this soup recipe make? I am getting a much higher points value when putting the recipe in the WW recipe builder and putting 4 servings.

  2. The instructions aren’t clear. When do I add the thyme? What do I setting do I use after adding the shrimp? Also, I think it’s better if you mix the flour into the milk before adding to the pot. This was a learning experience and i hope to make this dish again.

    1. Hi, so sorry…I can see that I left off a couple of things!! Thanks for letting me know. I add the thyme when I add the broth and potatoes. Yes I can see that mixing the flour and milk together first may help. I try to keep things as easy and using as few pans, bowls, etc as possible! Thanks for stopping by.
