It may be cold outside, but my tummy is warm with this Weight Watchers Chicken Enchilada Soup. This is a super easy Weight Watchers recipe to make this dinner for your family.
POINTS FOR WEIGHT WATCHERS
This delicious soup is only one myWW Point per serving for the Blue and Purple plans…yes…I said only one myWW Point per serving!! It is only 3 myWW Points for the Green plan.
The great news is that the serving size is one whole cup.
On the current WeightWatchers Program (2023) it is 1 point per serving.
This makes a very hearty dinner!
INGREDIENTS FOR CHICKEN ENCHILADA SOUP
This soup only has five ingredients. It is inexpensive to make and delicious to eat.
- Chicken Broth
- Black Beans
- Skinless, boneless chicken breast
- Mild enchilada sauce
- Diced tomatoes and green chilies
So this soup makes about 13 cups….yes, I measured it out!! I used Old El Paso Mild enchilada sauce because I love the flavor of this brand.
That makes for a very low point, filling meal that will feed a crowd.
HOW TO MAKE WW CHICKEN ENCHILADA SOUP
I made this soup on the stovetop, but it could easily be made in the slow cooker! Â Shortcuts in the kitchen are my favorite way to go whenever I can, and this recipe is full of great shortcuts to save you time!
I bought refrigerated bags of ready-to-eat cooked chicken breast. Â It is tasty and saved me a lot of time cooking chicken and cutting it up.
Be sure to drain and rinse the black beans. This only takes about 30 minutes to heat on the stove.
If you add toppings like shredded cheese, tortilla chips, sour cream….just remember to count those points! They add up quickly.
I like to use the Tortilla Strips that you find in the salad topping area at the store. Â They add some crunch to the soup but not a lot of points!

This Weight Watchers Chicken Enchilada Soup has only 1 myWW Point per serving. A delicious and filling soup that is perfect for a cold night.
- 2 cups Chicken Broth
- 2 cans Black Beans drained and rinsed
- 1 pound cooked skinless boneless chicken breast diced into small pieces
- 38 ounces mild enchilada sauce 2 19 oz cans
- 2 cans diced tomatoes and green chilies undrained

First off drain and rinse the black beans.

Add all the ingredients to a big pot.

Cook on medium-high heat until heated through. I cooked mine for about 30 minutes.
I used the bags of refrigerated chicken that is already cooked and sliced up thin for my soup. You can also cook your chicken and slice it up yourself.
This is 1 point for Blue and Purple myWW plans. This is 3 points for Green myWW plan.
Serving size is 1 cup.Â

Now that WW has gone with the new freestyle program, this recipe and others like it will be a lot less, since you can now have all the boneless/skinless chicken breasts you want for 0 points.
