DIFFERENT TACO SOUP VARIATIONS
There are SO many different ways to make taco soup. Before I was watching my calories, my go-to taco soup recipe had a few different ingredients than this recipe does.
I have seen taco soup made in the Instant Pot, slow cooker, and on the stovetop.
I adore slow cooker soup recipes, but I don't always remember to get it going in the morning. 😥 When this happens, I need a quick stovetop solution!
If you are being careful about what you eat, making taco soup a traditional way may add way too many calories! It is amazing how quickly ingredients add up.
One of the best variations for taco soup is to use ground turkey instead of ground beef. The ground turkey will save many WW points and can help make the recipe zero points!
WW POINTS FOR TACO SOUP
This specific WW taco soup recipe is zero points on the blue and purple myWW plans if you make it, just like I have listed below. The key to keeping it at zero points is to use the 99% fat-free ground turkey breast in the recipe. The green plan is 4 points.
Using a store-bought packet of taco seasoning in this soup CAN add points. My recipe uses spices from your pantry, and they are zero points.
Feel free to add MORE veggies if you like because those won't add any points and only add more nutrients to the bowl.
Now…here is the hard part. Everyone knows taco soup is extra good when you pile on the cheese, sour cream, etc, to the top of the bowl. These things will affect the points for your meal.
The good news is that since the soup is zero points (on blue and purple plans), you may have some extra points to spare for a little bit of cheese, sour cream, or tortilla chips.
TIP: if you make your own tortilla chips using the Mission Extra Thin Corn Tortillas, you can have more chips than if you eat store-bought tortilla chips! 🙂

- 99% Lean Ground Turkey
- Green Bell Pepper
- Onion
- Garlic Cloves
- Fat-Free Chicken Broth
or Stock
- Diced Tomatoes
- Black Beans
- Corn
- Chili Powder
- Cumin
- Paprika
- Oregano
- Salt & Pepper
- Non-stick Cooking Spray
HOW TO MAKE WEIGHT WATCHERS TACO SOUP
This is an easy recipe, and it doesn't take long to get the ingredients in the pot!
STEP ONE: SAUTE VEGGIES
Start by placing a medium or large pot on the stovetop and turning the heat to medium. Spray the pot with non-stick cooking spray.
Add the diced green bell pepper, diced onion, and minced garlic cloves to the pot. Sprinkle the veggies with a pinch of salt. Saute the veggies for a few minutes or until they are softened.
STEP TWO: BROWN TURKEY MEAT
Add the ground turkey breast to the pot, break it up and brown it.

STEP THREE: ADD CANNED INGREDIENTS
Now that the turkey breast is browned and the veggies are soft, it is time to add the canned goods.
Open the diced tomatoes and add them with the liquid to the pot.
Drain and rinse the black beans and add them to the pot.
Go ahead and drain the can of corn and add it to the pot.

This Weight Watchers Taco Soup is perfect for cool fall and winter evenings. Packed with veggies the soup is very low in points.
- 1 lb. 99% lean ground turkey
- 1 green bell pepper diced
- 2 garlic cloves minced
- 1 medium onion diced
- 15 ounces diced tomatoes canned with liquid
- 2 cups fat-free chicken stock or broth
- 15 ounces black beans drained and rinsed
- 15 ounces corn drained
- 2 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 teaspoon oregano
- Oil spray
- 1 bunch cilantro chopped, if desired as a topping
- 1 lime cut into wedges, if desired

Heat up a soup pot over medium heat and lightly spray with cooking spray.

Add the green bell pepper, onion and garlic, along with pinch of salt, and let it cook for 2 to 3 minutes till the vegetable are soft.

Add the ground turkey, breaking it up with a wooden spoon or spatula, and let it cook for another 3 to 4 minutes till it is cooked well.

Now add the can of diced tomatoes (with the liquid), black beans (drained/rinsed), corn (drained) and the spices (chili powder, cumin, paprika, oregano, salt and pepper).

Add the chicken stock and give everything a good mix.

Raise the heat to high and bring it to a boil. Reduce the heat to medium- low, cover and let it simmer about 30 minutes.

Serve with a handful of chopped cilantro and lime wedges if desired.
