Weight Watchers Slow Cooker Mexican Chicken Chili
It is fun seeing how many new combinations of zero-point foods I can make and still end up with something I will love. I am a die-hard soup lover and will actually make stews and soups all year long! Even if you aren't doing the Weight Watchers program…this is just a healthy recipe anyone would enjoy.

Ingredients Needed for Weight Watchers Slow Cooker Mexican Chicken Chili
- boneless, skinless chicken breast
- chili seasoning
- diced tomatoes and green chilies
- frozen corn
- great northern beans
- salsa
- water
- salt and pepper to your taste

How to Make Weight Watchers Mexican Chicken Chili
I like to buy Del Real Foods Shredded Chicken. It is already cooked and shredded and SO quick for soups.
If you are using regular chicken breasts, you can start by searing them in a skillet that has been sprayed with nonstick spray.
Once your chicken is done, place all the ingredients into a slow cooker and stir.
Cover the slow cooker and cook on low for 6 to 8 hours.
You can top this with shredded cheese or sour cream if desired, but be sure to count the points.
It can also be served with chips. Be careful because points from chips add up quickly. I love to top my soup with a few Fresh Gourmet Tortilla Strips. These give me a nice crunch and are low in points! These are usually located near the croutons at my local stores.

A Hearty Low Point Soup
This recipe has ZERO points per serving for the Blue and Purple myWW plans. The Green plan has 6 points per serving.
There are eight servings in total. Divide the soup equally into 8 bowls.
On the current Weight Watchers Program (2023), it is 0 points per serving.
Don't forget to add in any points you use on toppings! I personally thought the flavor was good enough on its own, so I didn't add cheese or sour cream.

Does the soup still cook for 6 to 8 hours if you use precooked chicken?
I don’t think it will need to.
I am excited to try this and when I added the recipe into the WW app I got 4 points. I am good with that but curious how you got zero!?
It will depend on what plan you are on.
