Use chicken breasts if you want to keep the recipe extremely light!
SHORTCUTS AND TIPS FOR MEXICAN CHICKEN CHILI
I love cooking chicken dishes. This is a chicken recipe that is very easy to make too! Using chicken is a great way to substitute the protein in a traditional beef chili. Here are a couple of tips and tricks if this is your first time making Mexican chili:
1. Use Rotisserie Chicken
If time is of the essence, consider precooked rotisserie chicken. To warm it through, just shred it and add it during the final 30 minutes of cooking. Leftover chicken would also work if you have some!
2. Storebought Salsa
For an instant flavor enhancement, replace diced tomatoes and onions with your favorite canned salsa instead of fresh ingredients.
3. Frozen Corn
For convenience of use and to save time slicing fresh corn, add frozen corn at the end of the cooking process.
4. Favorite Spices
You can modify the amount of chili powder to change the intensity of the heat. If you want just a little heat to moderate, use staples like paprika and cumin.

To finish off and to add a zesty touch, squeeze in some lime juice and garnish with fresh cilantro.

CAN I MAKE THIS ON THE STOVE?
​You can definitely do this, it may be a quicker method however you have to watch it while it cooks. Unlike with a slow cooker, you can just throw everything in the pot and leave it to cook. The cooking process would slightly differ as well. You might need to cook it on medium-low heat to avoid the chicken from drying out.

STEP ONE: PREPARE INGREDIENTS
With this recipe, Del Real Foods Shredded Chicken was used. It is an easy chili recipe filled with easy ingredients as well. Should you choose to use regular uncooked chicken breasts, you can begin by searing them in a skillet coated with nonstick cooking spray.
STEP TWO: START COOKING
Once the chicken is ready, throw that into the crock pot with the rest of the ingredients. Mix them all together until they are fully combined. Add all the traditional chili spices you want and start cooking! Cover the slow cooker and allow to cook on low for about 6 to 8 hours.

STEP THREE: SERVE
When that’s done, transfer to a bowl, squeeze some lime, top with cilantro, serve, and enjoy!
FOR A WW (WEIGHT WATCHERS) RECIPE
This recipe has ZERO points per serving for the Blue and Purple myWW plans. The Green plan has 6 points per serving. There are eight servings in total. Divide the soup equally into 8 bowls. On the current Weight Watchers Program (2023), it i 0 points per serving.
Don’t forget to add in any points you use on toppings! I personally thought the flavor was good enough on its own, so I didn’t add cheese or sour cream.

- 4 tbsp Chili Seasoning Mix if using packets you can use 2 packets

- 3 cups Water

Does the soup still cook for 6 to 8 hours if you use precooked chicken?
I don’t think it will need to.
I am excited to try this and when I added the recipe into the WW app I got 4 points. I am good with that but curious how you got zero!?
