This Weight Watchers Instant Pot White Chicken Chili is perfect for cool weather! The weather should be cooling off soon, and my mind is already on making a meal plan full of soups, chili, and chowder! I love taking recipes and making them into Weight Watchers recipes!

Weight Watchers White Chicken Chili

I don't know if there is anyone in the USA that hasn't heard about electric pressure cookers and the Instant Pot in particular. 

Some recipes seem to complicated for me to make in my electric pressure cooker, but soup is not one of those! It is super easy and is done in no time at all.

I think you will enjoy how easy this Weight Watchers White Chicken Chili really is to make.

How to Make Weight Watchers White Chicken Chili

Get ready…. First, you need to put all the ingredients in your pressure cooker.

Next, set the Instant Pot to the soup setting for 15 minutes.

Do a quick release at the end of the cooking time, and you are done!

This will take about 30 minutes total… which includes the time the IP takes to build up the pressure at the beginning.

Points for White Chicken Chili

Hold on to your hats,….this yummy Weight Watchers White Chicken Chili is ZERO points if you are on the blue or purple myWW plans! If you are on the green plan, it is 8 points. Who doesn't LOVE a low-calorie, filling soup?

On the current Weight Watchers Program (2023), it is 0 points per serving.

This recipe is full of filling fiber with the beans and has a great kick to it. You can use mild, medium or even hot Picante sauce! 

I figured this recipe using Pace Original Mild Picante sauce. This was zero points. Other brands could have a different points calculation so watch that closely!

The other thing to note is that I used fat-free chicken broth. If you use regular chicken broth it could increase the points based on if the broth has any fat in it. I have found that low sodium broths tend to be zero points.

Don't forget that if you like to add extra toppings to your soups…like cheese, sour cream, etc. that you will need to count those points.

Weight Watchers White Chicken Chili is made in the Instant Pot and is very simple to make.

Ingredients
  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 32 ounces Picante sauce 2 16 oz. jars works great. Mild, medium or hot is fine.
  • 48 ounces fat-free chicken broth
  • 48 ounces canned Great Northern beans drained
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
Instructions
  1. Cut your chicken into small bite-sized pieces.

  2. Drain the Great Northern beans.

  3. Combine all ingredients in Instant Pot and cook on soup setting for 15 minutes. 

  4. When the cooking time is done do a quick release of the pressure. 

Recipe Notes

Be sure to check points if you use another brand of Picante sauce. I based the points on Pace. Other brands could have points.

I sometimes have trouble finding fat-free chicken broth. Typically the low sodium broths end up being zero points. Check labels and pick a broth that doesn't have fat in the nutritional facts.

You can make this mild or HOT. Pick a picante sauce that suits your taste buds.

If made with the ingredients I have listed this comes out to be zero points on the blue and purple myWW Plans. The green plan is 8 points.

I got about 10 cups from my batch of chili and each serving is one cup. 

On the current Weight Watchers Program (2023), it is 0 points per serving.
