Lowering carbs can be tricky and the key is to find delicious recipes that don’t make you feel like you are missing out on anything. I have been working on eating fewer carbs and I am kind of picky when it comes to meat and veggies….so yes…it is hard for me, LOL. I was kind of in the mood for tacos, but didn’t want to eat the tortillas or corn shells. Instead I decided to make some low carb mini bell pepper taco boats instead. These really hit the spot and were packed with YUM!
Low Carb Mini Bell Pepper Taco Boats
There are lots of ways to add variety to these low carb mini bell pepper taco boats. You can add different veggies to the top based on your taste preferences. I used ground beef taco meat, but sometimes I use ground turkey or chicken instead. These are also great if you are following the Weight Watchers plan. Just use ground turkey or chicken meat to lower SmartPoints and use less cheese! The bell peppers are zero points!
Ingredients for Low Carb Mini Bell Pepper Taco Boats
1 bag of mini bell peppers
1 pound of ground beef, turkey or chicken browned
packet of taco seasoning
1-2 cups shredded cheese
Other toppings as desired such as olives, jalapenos, sour cream, lettuce
How to Make Low Carb Mini Bell Pepper Taco Boats
Preheat oven to 350 degrees F.
First off you want to get the ground beef browning. While the meat is browning start cleaning and cutting the mini bell peppers. I like to just cut my peppers in half vertically (long ways). Cut out the white rib area inside the pepper and rinse off any seeds.
Once the meat has browned add the taco seasoning and water according to the package instructions.
Place the cleaned and cut peppers on a baking sheet. Top with taco meat.
Bake for 15-20 minutes or until the peppers are tender. Remove from the oven and top with shredded cheese. Bake for an additional 5 minutes or until the cheese is melted.
Once the taco boats are done baking you can add other toppings as desired!
Easy to Adapt for Weight Watchers
This recipe is also great for people following Weight Watchers. If you substitute ground turkey or ground chicken in the recipe you will save quite a few SmartPoints. Use less shredded cheese or even fat-free cheese to save more points are you are set! These go great with my Weight Watchers Chicken Enchilada Bake. They are also a great dish to take as an appetizer to parties for no guilt snacking!
