BENEFITS OF EATING BELL PEPPERS
I love red, yellow and orange bell peppers. They are so colorful and dress up any recipe.
Although I always think of bell peppers as a vegetable, they are actually in the fruit family and are a nightshade.
Bell peppers are very low in calories yet high in nutrients like Vitamin C, Vitamin B6, Vitamin K1, Potassium, Folate, Vitamin E and Vitamin A. WOW…that is a lot of reasons to add peppers into our diets.
INGREDIENTS IN AIR FRYER BELL PEPPER STRIPS
The majority of the ingredients in this recipe are seasonings that make the breading more flavorful.
- Bell Peppers
- Olive Oil
- Whole Wheat Panko Breadcrumbs
- Paprika
- Garlic Powder
- Salt
- Black Pepper
- Egg
- Water
HOW TO MAKE AIR FRYER BREADED BELL PEPPER STRIPS
I like easy recipes and honestly…breading foods is kind of a pain to me. BUT…I also like fried foods, but am trying to eat healthier. It is SO worth the time to bread these little bell pepper strips…because they are SO GOOD!
STEP ONE: MAKE BREADING
Start off by spraying the air fryer basket with olive oil.
In a medium shallow bowl combine the breadcrumbs, paprika, garlic powder, salt and pepper and stir to combine.
STEP TWO: EGG WASH
In a small shallow bowl combine the egg and water to make an egg wash.
STEP THREE: BREAD BELL PEPPERS
Dip the bell pepper strips into the egg mixture to coat and then dredge in the breadcrumb mixture. Push the breadcrumbs into the peppers as much as you can to help it stick better.
STEP FOUR: AIR FRY
Place the coated bell pepper strips in the air fryer basket in a single layer. Lightly spray the strips with olive oil.
Air fry at 400°F for 4-7 minutes or until the strips have reached your desired level of brown and crispy.
AIR FRYER BREADED BELL PEPPER STRIPS RECIPE
If you are following the Weight Watchers program this recipe will be 2 for Purple, 2 for Green, 2 for Blue myWW plans. This is based on using ALL the panko breadcrumbs. There are always quite a bit of breadcrumbs left after breading the strips….so it is probably more likely to be 1 point per serving.
Divide the pepper strips into 4 equal portions for a serving.
On the current WeightWatchers Program (2023) it is 1 point per serving.

These Air Fryer Breaded Bell Pepper Strips are a delicious snack or side dish and much healthier than traditional fried peppers!
- Olive oil for spritzing
- 2/3 cup whole wheat panko breadcrumbs
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg beaten
- ½ tablespoon water
- 2 large bell peppers red, orange or yellow bell peppers, seeded and cut into ½ inch thick slices

Spritz air fryer basket lightly with oil.

Combine whole wheat panko breadcrumbs, paprika, garlic powder, pepper and salt into a medium shallow bowl.

Combine the beaten egg and water in a small shallow bowl to make an egg wash.

Dip the bell pepper slices in the egg wash to coat.

Dredge the coated bell pepper slices in the seasoned panko breadcrumbs to lightly coat.

Place the panko coated bell pepper slices in a single layer in the air fryer basket.

Lightly spray the bell pepper strips with oil.

Air fry at 400°F for 4-7 minutes or until the panko crumbs are lightly browned.

Carefully remove from air fryer basket to ensure the panko coating does not come off the bell pepper strips. Serve immediately.
Divide this into 4 equal portions.
Each serving is 2 points on all 3 myWW plans...Purple, Blue and Green. This is based on ALL the breadcrumbs being used....and that probably won't be the case.
On the current WeightWatchers Program (2023) it is 1 points per serving.
