WHAT TO DO WITH LEFTOVER POT ROAST?
Do you ever make a pot roast and have meat left over that never gets eaten? This happens fairly regularly at our house and I do hate to waste food! There is an easy solution for leftover pot roast and that is to make beef and noodles!
This is such an easy weeknight dinner solution and honestly…I love it! Three Ingredient Beef and Noodles is just comfort food to me! This is a meal that one of my girls really loves. The two of us can eat the whole pot ourselves!
I also LOVE, LOVE, LOVE simple dinners that don't involve a lot of ingredients! This recipe fits the bill perfectly with only 3 main ingredients! It is a budget-friendly meal. I like to stock up on frozen egg noodles around the holidays when they are on sale!
INGREDIENTS FOR BEEF AND NOODLES
I almost always have beef broth stocked in my pantry. There is just something satisfying about eating dinner and knowing it only took 3 ingredients to make such a delicious meal! I don't count salt and pepper as an ingredient because many people omit them.
- Frozen egg noodles
- Beef broth
- Cooked pot roast
- salt/pepper to taste, if desired
HOW TO MAKE THREE INGREDIENT BEEF AND NOODLES
I have made this simple beef and noodles recipe so many times that I don't need a recipe! It is also VERY easy to double this and the leftovers are almost better than eating it the first night.
STEP ONE: BOIL BROTH
Start off by adding the beef broth to a large saucepan.
Dice up the cooked pot roast into small bite-sized pieces and add them to the pot of broth.
Turn the heat to medium-high and bring the broth to a boil.
STEP TWO: ADD NOODLES
Once the broth and beef is boiling go ahead and add the frozen egg noodles. Cook the noodles according to the package directions. It is usually around 20 minutes or so.
When the noodles are done cooking then dinner is done. You can let it sit for a few minutes to allow the broth to thicken up some if you prefer. I like mine a little soupy!!

- 24 ounce egg noodles frozen
- 64 ounces beef broth
- 2 cups cooked pot roast shredded or cut up into small chunks (can add more than 2 cups if desired)
- salt/pepper to taste
Bring beef broth and diced pot roast to a boil in a large saucepan.
Add your frozen egg noodles and cook according to package instructions for the egg noodles.
Once the egg noodles are cooked you are set!
You can add salt and pepper to taste if you prefer.
This is kind of soupy when initially cooked. We like it soupy, but if you want to let it sit for a little bit it will thicken up.
