Every year after Easter I know that egg salad will be on the menu because we always have a bunch of hard-boiled eggs in the fridge! This year I wanted to take the egg salad up a notch so I came up with this Spicy Egg Salad recipe for sandwiches!
I like to buy what I call “special bread” when we eat sandwiches for dinner to make it a little more fun. I usually just go to the bakery at the store and get croissants, hoagies, sourdough, etc. to make dinner a little bit special. You can definitely eat this egg salad on regular sandwich bread and it will taste amazing!
Ingredients for Spicy Egg Salad Sandwiches
8 hard-boiled eggs, shells removed
1/2 cup mayonnaise
1 teaspoon mustard (any variety you like)
1/2 teaspoon paprika
3 teaspoons diced jalapenos
2/3 cup shredded sharp cheddar cheese
1/8 teaspoon salt (or more for taste)
1/8 teaspoon pepper (or more for taste)

How to Make Spicy Egg Salad Sandwiches
First you will need to hard boil your eggs if you don't have some on hand. Remove the shells and rinse the eggs to make sure that no tiny shell fragments remain.
Dice your eggs up into small bits. I like to use my food chopper to dice up eggs. It is quick, easy and gets them just the right size!
In a bowl, combine your mayo, mustard, jalapenos, cheese and spices and stir by hand until well combined.
Add your eggs into the mixture and stir.
Put some Spicy Egg Salad onto your bread and enjoy!
We didn't find this recipe to be too spicy, but you can tame it down more by using less jalapenos or getting mild jalapenos. I just keep a jar of diced jalapenos in the fridge all the time so that I can add a few spoonfuls to recipes with ease. If you want to heat it up even more…just add extra jalapenos or even use pepper jack cheese!

Jalapenos are a bit much for me, but I add dijon mustard to mine. 🙂
I think dijon can add a lot of flavor and just enough spice!!
