EASY ONE POT CHILI MAC AND CHEESE
We eat chili a lot around our house…it is a meal that is easy to make and everyone likes. Â I get sick of it after a while though….so I decided to change it up a little and add an ingredient that is always a hit…pasta! Â
I love dinners that leave leftovers that my husband and I can eat for lunch the next day and that actually taste good as leftovers….this Chili Mac fits the bill! Â It makes a big pot and we have some left for our lunch. Â It reheats nicely and is just as tasty the next day.
INGREDIENTS FOR CHILI MAC
The ingredients for one pot chili mac are pretty straight forward. If you keep ingredients for chili on hand you are over half way there!
- ground beef, brownedÂ
- minced garlic
- onion powder (or one small onion finely diced)
- chili beansÂ
- kidney beans
- Ro-TelÂ
- chili powder
- cumin
- salt
- pepper
- chicken broth
- elbow macaroni
- Shredded Cheese
HOW TO MAKE ONE POT CHILI MAC
The easiest way to make this is in one pot! Â Less clean up for you afterwards!! Â
STEP ONE: BROWN GROUND BEEF
Take a large pot and brown your ground beef with the minced garlic and onion powder. Â Drain any excess fat.
STEP TWO:Â ADD INGREDIENTS AND COOK
Stir in the chicken broth, beans, Ro-Tel and spices. Â
Bring to a simmer and then stir in the pasta. Â Bring to a boil then cover and reduce the heat and simmer until pasta is fully cooked. Â This is usually 11-15 minutes. Â
Be careful not to overcook the pasta or it will be mushy!
Remove the pot from the heat. Â
STEP THREE: ADD CHEESE
Garnish with as much shredded cheese as desired.

This is a great variation on chili and really is a one pot meal! Â I typically have most of these ingredients on hand so it is quick to throw together on a chilly fall day!

This One Pot Chili Mac is a great twist on chili that is a filling comfort food! Chili Macaroni is a meal that the whole family will love!
- 1 pound ground beef browned
- 1 Tablespoon minced garlic
- 2 Tablespoons onion powder or one small onion finely diced
- 15 ounce can chili beans with liquid
- 15 ounce can kidney beans rinsed and drained
- 1 can Ro-Tel with liquid mild or hot
- 2 teaspoons chili powder
- 1 1/2 teaspoons cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups chicken broth
- 16 oz elbow macaroni noodles
- 1 cup Shredded Cheese or more, as desired
