I am a big fan of meatloaf…well my meatloaf!  ðŸ™‚   I have a mini meatloaf recipe that I LOVE and my family loves.  My daughter asked me to make it recently and I said SURE…but I actually made a separate batch for myself that was low carb.  Low carb meatloaf is actually really good and I didn't feel at all deprived.

Low Carb Meatloaf

It only takes a few minor adaptions to make a low carb meatloaf. Since the base of meatloaf is well…MEAT…you are starting off with a lot of protein anyway.  Here is how I made mine!

Ingredients Needed for Low Carb Meatloaf

1 pound ground beef

2 eggs

3 tablespoons of sugar-free barbeque sauce

1 cup of crushed pork rinds (I used spicy pork rinds to add more flavor)

Salt and Pepper to taste

1 extra teaspoon of sugar-free BBQ sauce on top of each mini meatloaf

How to Make Low Carb Meatloaf

If cooking these in the oven, preheat to 350 degrees F.

I put all my ingredients into my KitchenAid mixer and used the meat hook.  Mix until the ingredients are well combined.

Form the meat mixture into small mini meatloaves about the size of your palm. 

Place on rack of NuWave Oven or on a baking pan with a rack like the one below.  You really need to cook these on a rack of some kind so the grease can drip down.  

The cook time is going to vary on these depending on where you cook them and how big they are!  I always cook mine in the NuWave Oven and they take 7-10 minutes per side. 

If you cook them in the oven it will probably take 20-30 minutes.  Just make sure they are cooked all the way through inside.  

I like to allow them to get brown and a little crunchy on top, but that is my preference.
