This simple homemade Weight Watchers Enchilada Sauce is only 5 ingredients and very low in points!
In a small bowl add the cornstarch and the chicken stock and stir until the cornstarch dissolves.
Increase the heat to medium high and simmer for 2 to 3 minutes or till the sauce thickens to your desired consistency.
This recipe makes about 3 cups. The serving size is 1/2 cup.
