There are a lot of recipes that call for enchilada sauce. It is an ingredient I personally love!

One simple lunch I make a lot when I am watching my points and calories is to just grab some thin corn tortillas, some fat-free refried beans, and some enchilada sauce. I make up some simple burritos and it is filling and very low in points.

INGREDIENTS FOR WW ENCHILADA SAUCE

I love that this recipe makes about 3 cups of sauce. This is usually plenty for any recipe with some extra in case you need it.

  • Tomato sauce
  • Taco seasoning
  • Olive oil
  • Chicken stock
  • Cornstarch

HOW TO MAKE HOMEMADE ENCHILADA SAUCE

Making homemade enchilada sauce is so simple you will wish you had been doing it all along! It is so nice to know exactly what is in our food. Only 5 simple ingredients and you have an enchilada sauce you can use with so many recipes.

STEP ONE: HEAT OIL

The first step is to heat a saucepan over medium heat on the stove. Add the olive oil to the pan and heat it.

Once the oil is hot, add the taco seasoning and toast the taco seasoning for 30 to 45 seconds on low heat. Keep a close eye on it so it doesn't burn.

I like to use homemade taco seasoning that I keep on hand in my pantry!

STEP TWO: ADD SAUCE

Now add the tomato sauce to the saucepan and stir to combine it well with the taco seasoning/oil mixture.

STEP THREE: ADD CHICKEN STOCK

In a separate small bowl add the cornstarch to the chicken stock and stir it until the cornstarch dissolves.

Now add the cornstarch/chicken stock mixture to the saucepan and stir it together until well-combined.

Increase the heat to medium-high and allow the mixture to simmer for 2 to 3 minutes or until the sauce thickens to your desired consistency.

STEP FOUR: COOL AND STORE

Now allow the enchilada sauce to cool to room temperature. You can use it in a recipe or pour it into a clean glass jar and store it in the refrigerator for up to one week.

WEIGHT WATCHERS POINTS

This Weight Watchers Enchilada Sauce is low in points and very versatile. It is a great ingredient to keep on hand in the refrigerator if you are following the Weight Watchers program.

This recipe makes about 3 cups of homemade enchilada sauce. A serving is 1/2 cup.

There is only 1 point per serving for purple, green and blue plans!

On the current WeightWatchers Program (2023) it is ZERO Points per serving.

  1. Thanks for updating the recipe. for the modern WW plan. Quick note. no need to use olive oil. I have dry toasted my homemade and competition chili recipe ingredients for 20 years. In fact – avoid added oil to concentrate the oil, aromatics, and flavors that come to the surface of the chili powder or other dry ingredients. Also, although minimal – for those watching carbs, the cornstarch can be substituted with low-carb baking mix or a thickener like Thick and Thin. More authentic flavor, but still with carbs, use toasted masa flour (again just using a dry skillet). Weight Watchers really works. Under the old plan (color coded plan) I loss 40 pounds only to regain it. Under the new plan, which is a lifestyle change plan I have lost 105 lbs in 29 months. Thanks again for the recipe.
