Air Fryer Greek Chicken Kabobs are a flavorful dinner recipe the whole family will enjoy eating. This is one of those air fryer recipes that will become a new favorite and part of your menu rotation. If you are following the WW program this is a wonderful Weight Watchers recipe too.

WHAT ARE GREEK FLAVORS?
If you are not familiar with Greek cuisine you may wonder what makes Greek food different.
Greek food has certain spices and seasonings that make the flavor unique.
Some common spices used in Greek cooking are oregano, dill, garlic, parsley, marjoram, basil, salt, pepper, and thyme.
Common Mediterranean dishes may include fish, olives, seafood, eggplant, cucumber, tomatoes, spinach, lentils, yogurt, cheese, eggs, chicken and lamb.
INGREDIENTS IN GREEK CHICKEN KABOBS
These air fryer Greek chicken kabobs are full of chicken and veggies and marinated in a lovely sauce that packs a great flavor.
- Chicken
- Zucchini
- Red Onion
- Grape Tomatoes
- Garlic
- Red Wine Vinegar
- Lemon
- Oregano
- Olive Oil
- Salt
- Black Pepper
- Olive oil spray
HOW TO MAKE AIR FRYER GREEK CHICKEN KABOBS
I love the way chicken cooks in the air fryer. The result is juicy on the inside and perfectly crisp on the outside. It really sears the flavors into the chicken and veggies.
STEP ONE: PREPARE MARINADE
In a mason jar combine the garlic, red wine vinegar, lemon juice, oregano, and olive oil.
Put the lid on the jar and shake the contents to combine.
STEP TWO: MARINATE CHICKEN
Place the bite-sized chicken pieces in a large bowl and pour the marinade over the chicken.
Toss the chicken to coat it in the marinade.
Place the bowl in the refrigerator and allow the chicken to marinate for 2 hours or overnight for the best results.
If you are short on time then just marinate the chicken for 15 minutes on the counter.
STEP THREE: PREPARE VEGGIES
When the chicken is almost done marinating it will be time to get the vegetables ready.
Toss the vegetables in olive oil and salt and pepper them.
STEP FOUR: MAKE KABOBS
Now thread the chicken and veggies alternating on the skewers.
If you are using wooden skewers be sure to soak the skewers in water for 30 minutes before assembling them.
Don't forget to make sure the skewers you are using will fit in your air fryer basket. I use 6-inch metal skewers and they work great!
STEP FIVE: AIR FRY
Lightly spray the air fryer basket with olive oil spray. Don't use an aerosol spray in the air fryer!
Place the skewers in the air fryer basket allowing room between each skewer.
Air fry at 380°F for 15 to 18 minutes, flipping the skewers over halfway through the cooking time. Cook until the chicken reaches an internal temperature of at least 165°F.
WW POINTS FOR GREEK CHICKEN KABOBS
If you are following the WW program this is a great WW dinner recipe.
There are 4 points per serving on the Purple and Blue plans and 7 points on the Green plan.
The points are coming from the olive oil in the marinade. Personally, I think the points are actually much lower because most of the marinade isn't actually consumed.
It is up to you if you want to count the 4 or 7 points or if you want to reduce the points because you aren't eating all of the marinade.
On the current WeightWatchers Program (2023) it is 4 points per serving.
AIR FRYER GREEK CHICKEN KABOBS RECIPE

These Air Fryer Greek Chicken Kabobs are flavorful and packed with chicken and veggies.
- 2 boneless skinless chicken breasts cut into 2 inch pieces
- 1 large zucchini halved through the length and cut into 1 inch slices
- 1 red onion cut into 1 inch pieces
- ½ pint grape tomatoes
- 1 clove garlic minced
- 2 tablespoons red wine vinegar
- 1 lemon juiced
- 1 teaspoon dried oregano
- ¼ cup plus 1 tablespoon olive oil divided
- Salt to taste
- Black pepper to taste
- Olive Oil Spray

In a bowl or mason jar, mix together garlic, red wine vinegar, lemon juice, oregano, and ¼ cup olive oil. Whisk (or shake) until blended. Pour over chicken. Toss to coat. Marinate on the counter for 15 minutes or in the refrigerator for 2 hours to overnight.

When ready to cook, prep vegetables and toss in 1 tablespoon olive oil. Sprinkle with salt and pepper.

Arrange cubed chicken breast, zucchini, onion, and grape tomatoes on skewers. If using wooden skewers be sure to soak them for 30 minutes in water first.

Spray the air fryer basket lightly with olive oil spray.

Place kebabs in air fryer at 380 degrees for 15 to 18 minutes, carefully flipping halfway. Check chicken for doneness and serve warm.
I like to use 6 inch metal skewers for the air fryer.
There are 4 points per serving on the Blue and Purple myWW plans. There are 7 points on the Green myWW plan.
