Spinach and Feta Stuffed Turkey Tenderloin for Weight Watchers

This stuffed-turkey-tenderloin combines lean turkey breast with spinach and feta cheese for an elegant, protein-rich meal that's only 1 Weight Watchers point per serving.

Ingredients

  • 2 turkey breast tenderloin
  • 5 oz box of baby spinach
  • 1 large yellow onion
  • 1 large red bell pepper diced
  • 2 cloves of garlic minced
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of dried oregano
  • 2 tablespoon of crumbled Feta cheese
  • salt and pepper
  • Non stick spray

Instructions

  1. In a pan heat a tablespoon of oil. saute the chopped onion, garlic till fragrant. Add the red bell pepper, oregano, salt and pepper and cook for a couple of minutes. Add the spinach and let it wilt. keep the filling aside to cool.
  2. Butterfly the turkey breast tenderloin. Place a parchment paper over it and using a meat mallet pound it into an even thickness of 1/2 an inch.
  3. Season with salt and pepper
  4. Place half of the filling on one side of the turnkey breast. top with a tablespoon of feta.
  5. Roll the breast into a log and secure with a twine. lightly spray the op of the turkey breast log with cooking spray and season with salt and pepper.
  6. Bake a 375 F oven for 30 minutes. The internal temperature should read 170 F.
  7. Let the turkey rest for 10 minutes before slicing.
