Looking for a yummy and healthy dinner that won’t blow your Weight Watchers points? This stuffed-turkey-tenderloin is it! It’s lean, protein packed and fancy enough for company but easy enough for a weeknight dinner.
I love creating recipes that make weight management easier while still being super delicious. This stuffed turkey tenderloin has become one of my family’s favorites – it’s tender, flavorful and looks impressive when served!

WHAT IS A TURKEY TENDERLOIN?
A turkey tenderloin is a boneless, skinless portion of the turkey breast that’s super lean and tender. Think of it as the filet mignon of turkey! It’s the most tender part of the turkey breast because these muscles don’t get much exercise during the turkey’s life.
Unlike a whole turkey breast, tenderloins are smaller, usually 8-16 ounces each, so perfect for smaller families or when you don’t want lots of leftovers. They’re also super versatile and cook way faster than a whole turkey breast.

HOW TO BUTTERFLY A TURKEY TENDERLOIN
Don’t be intimidated by butterflying – it’s easier than you think! Here’s how to do it:
- Place the tenderloin on a cutting board and position your knife parallel to the board
- Starting at the thicker side, slice through the middle horizontally, stopping about ½ inch from the other edge
- Open the tenderloin like a book – this gives us more surface area for our stuffing!
- If needed, cover with plastic wrap and gently pound to even thickness
WEIGHT WATCHERS POINTS
I used a 48-ounce tenderloin for this recipe. Each serving size is 8 ounces. There is only 1 point per serving based on my results in the WW app. Please note that for the most accurate points, you should always enter the recipe into the app while you are logged in.
What makes this recipe so WW-friendly is the use of lean turkey tenderloin combined with nutritious spinach and just enough feta to add amazing flavor without too many points. It's a perfect example of how you can enjoy a restaurant-quality meal while staying on track with your health goals!

HOW TO MAKE A STUFFED TENDERLOIN
STEP ONE: PREPARE THE FILLING
Heat a tablespoon of oil in a pan. Sauté the chopped onion and garlic until fragrant. Add the red bell pepper, oregano, salt, and pepper, cooking for a couple of minutes. Add the spinach and let it wilt. Set the filling aside to cool.

STEP TWO: PREPARE THE TURKEY
Butterfly the turkey breast tenderloin. Place a parchment paper over it and using a meat mallet, pound it into an even thickness of 1/2 an inch. Season both sides with salt and pepper.

STEP THREE: STUFF AND ROLL
Place half of the cooled filling on one side of the turkey breast. Top with a tablespoon of feta cheese. Carefully roll the breast into a log shape and secure with kitchen twine. Lightly spray the top of the turkey breast log with cooking spray and season with additional salt and pepper.

STEP FOUR: BAKE AND REST
Place the rolled turkey in a preheated 375°F oven and bake for approximately 30 minutes, or until the internal temperature reaches 170°F. Once done, let the turkey rest for 10 minutes before removing the twine and slicing.

Pro Tip: Letting the turkey rest is crucial as it allows the juices to redistribute throughout the meat, ensuring each slice stays moist and flavorful.
