Crazy Good Corn Dip is a delicious, spicy and addicting dip! It is very quick and easy to make and you can make it ahead of time for parties.
- 3 cans cans fiesta corn drained
- 1 can small can chopped jalapeno peppers usually 4-6oz drained, saved liquid
- 1 cup mayonnaise
- 1 cup sour cream
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 8 oz shredded sharp cheddar cheese
- 2 bags bags tortilla or corn chips for dipping

In a large bowl, combine all ingredients except chips.

If you want a little more flavor, add some of the jalapeno juice.

Chill 2 hours or overnight.

Serve with chips.
This is great for making the day before a party…it keeps very well in the refrigerator.
You can use 1/2 can jalapenos if you want to make this dip a little less spicy.
I think the sharp cheddar cheese is important….it really does add flavor to the dip!
