I may have a new favorite soup…Crock Pot Ham and Potato Chowder! Picking a new favorite is a big deal because I love soups and chowder! I had leftover ham from Christmas that I needed to get used. I searched for just the right recipe and couldn't find anything that fit perfectly with what I had on hand. So, I just improvised and am in LOVE with this new Crock Pot Ham and Potato Chowder recipe!
The other plus is that everyone in my family liked it. My 16-year-old son even said he “loved” it! That is saying a lot because I usually don't get too much feedback from him…unless he dislikes what I make! 🙂
This Crock Pot Ham and Potato Chowder has heavy cream in it…so it isn't the lowest calorie soup you have ever eaten, BUT I think the heavy cream is part of what makes it SO good! I would not skimp on it…instead just try to eat only one bowl!
The other bonus…it is made in the crock pot! Yippee for easy cooking!

- 6-8 medium russet potatoes
- 1-2 cups diced ham
- 12 oz bag frozen corn
- 32 oz carton chicken broth
- 1 cup shredded carrots
- 2 cups shredded cheese cheddar or any variety you prefer
- 1/2 teaspoon pepper
- 1 teaspoon minced garlic
- 1/2 cup minced onions or onion powder
- 2 cups heavy cream
- 1/4 cup butter
-
Peel and dice potatoes and put them into the crock pot.
-
Add frozen corn, ham and carrots to the crock pot.
-
Add onion, pepper, garlic and broth to the crock pot.
-
Cook this mixture for 6-7 hours on low or 4-5 hours on high.
-
During the last hour of cooking, add the heavy cream, butter and cheese. Stir well and finish cooking at least 30 minutes to an hour. Stir occasionally during this last cooking phase.
-
You will want to salt this to your taste. Depending on how salty the ham is I chose to not add salt until the soup was done and I could taste it!
-
You can garnish with more shredded cheese if you like or even some crumbled bacon!
This can be a versatile chowder...you can add more or less ham...more or less carrots, etc. Just make it to your family's tastes!
You will want to use a larger crock pot..probably around a 7 quart.
