Who is already planning out their menu for Christmas? I have it pretty easy for most holidays! Typically I only have to prepare some easy side dishes. I tried a new side dish this week that was easy and delish…Garlic Parmesan Baby Potatoes! This is a keeper that I will make year round.
Garlic Parmesan Baby Potatoes
I found a big baby of baby potatoes at the store…they are just too cute to pass up. So I made this recipe up…roasted them and we ate them with bacon wrapped chicken breasts one night.
How to Make Garlic Parmesan Baby Potatoes
Preheat the oven to 400 degrees F.
Cut the baby potatoes in half, leaving the skin on.
I like to make roasted veggies the mess-free way. I take a large zippered plastic baggie and add my oil, garlic
, salt and pepper.
Mix the oil and spices around in the bag and then add the baby potatoes.
Move the potatoes around in the bag so they are all coated well with the oil and spices.
Now dump the potatoes onto a baking pan or sheet pan. I like to cover the pan with nonstick foil to make clean up quicker.
Bake for 30 minutes or until starting to brown on top and are cooked all the way through! I will leave these in for even longer for a crunchy potato too! YUM!

What side dishes does your family have for Christmas dinner? We always have mashed potatoes, corn, green bean casserole for sure. I like to sometimes bring something NEW and different and throw the family off a little bit, LOL! I think it is fun to mix it up…BUT I have learned NOT to try a NEW, untested recipe on the actual holiday! Yep…I have made some dishes that weren't too good before. I have learned to try new ideas out beforehand so I don't get any glares at the holiday meal! 🙂
