I love a sweet and gooey rice krispie treat! I figured that a “holiday” version would be even better…I was partially right.
I found this recipe on a really fun blog called, Essentially Eclectic! You can see the original recipe HERE. I stuck with the original recipe except I used Andes Peppermint Crunch Baking Chips instead of actual candy canes.
I felt these had wonderful flavor…the peppermint flavor was just right. My only issue was that they weren't gooey enough. I felt like they needed more marshmallows! Now, I will say that I usually double the amount of marshmallows in my rice krispie treats…
I wanted to go ahead and post my results from this sweet treat! I do plan to make this again with more marshmallows!! If you try it…let me know what you think!

- 6 cups Rice Krispie Cereal or generic
- 3 Tablespoons Butter
- 4 cups mini marshmallows
- 4-6 full size candy canes or 1/2 to 1 cup Andes Peppermint Crunch Baking Chips
- Wilton White Chocolate Candy Melts

First you need to crush your candy canes into tiny, fine pieces. This can be done with a rolling pin or using the bottom of a glass.

Next, you will melt your white chocolate in a double boiler or in the microwave. There are instructions on the package for melting in the microwave. You can use more or less chocolate depending on how much sweet taste you want.

In a large pot on the stove, melt your butter and toss in your marshmallows.

Stir marshmallows and while they are melting, add in about half of your candy cane crumbles. The candy cane pieces should melt, turning your marshmallow mixture a little bit pink.

Now add your melted white chocolate to the marshmallow mixture and stir.

It is time to add in your rice krispie cereal and mix it all up.

Now you can add some more of your crushed candy canes in to this mixture to add a little more color and peppermint taste. Depending on how much peppermint flavor you want in your treats...you can add a little or a lot!

Place your treat mix in a cake pan or casserole dish. 9x13 works fine.

Cover the mixture with parchment paper and gently press the mixture down into your pan.

Enjoy!
If you prefer less of the peppermint flavor, use 4 candy canes....more flavor, use 6 candy canes.
