I really like meals that are all together….like the meal has the veggies, protein, etc. all inside! This recipe has all the goodies ready to go. Plus, it is easy to customize for picky eaters.

Ingredients Needed for Weight Watchers Instant Pot BBQ Chicken Bowls
- boneless skinless chicken breasts
- sugar-free BBQ Sauce
- water
- dehydrated onion flake
- garlic clove
- zucchini spirals
- black beans
- frozen corn
- Pepper jack cheese
- scallions
How to Make Weight Watchers Instant Pot BBQ Chicken Bowls
Place the chicken breasts in the Instant Pot liner.
Mix the bbq sauce, water, onion flakes, and minced garlic in a bowl and pour over the chicken.

Lock the lid, set the vent to sealing, and press manual high pressure for 8 minutes.
Cook zucchini spirals in a skillet with salt and pepper for about 7-8 minutes.
When the Instant Pot beeps, let the pressure release naturally for 10 minutes.
Remove chicken and slice.

Place zucchini spirals, black beans, corn, and chicken on a plate or in a bowl.
Sprinkle with pepper jack cheese and scallions.
Makes four bowls and is perfect for meal planning for the week.

I didn’t see instructions on cooking the beans and the frozen corn. Did I miss something?
They are just sides…the corn is listed as thawed and the corn and beans can be warmed up or just eaten at room temperature. Thanks!
