BBQ Cups were introduced to me in high school at a friend's house. I fell in love with these yummy little treats and have been making them ever since! It is a great meal for families with children because kids just think these BBQ cups are fun to eat!
When I made them last week my kids were on my case because it had been quite a while since I made them last….they were very clear that they want to eat these more often! 🙂
Another thing I like about these is that they would be great as an appetizer or party snack. They are easy to eat with your fingers and I think they make a great game food!
Ingredients for BBQ Cups
2 cans refrigerated biscuit dough
1 pound lean ground beef, browned
3/4 cup BBQ sauce
1 teaspoon onion powder or 1/4 cup finely chopped onion
1 cup shredded cheddar cheese
You can use any kind of biscuits that you like except the large Grands biscuits…those are just too big for a muffin pan. I like to use the Pillsbury Grands Jr. biscuits for this recipe. You can use your favorite BBQ sauce…we like Sweet Baby Ray's at our house! You know I hate onions…so I use onion powder…but feel free to put the real thing in if you like! You can use any kind of shredded cheese also.
How to Make BBQ Cups
Preheat oven to 400 degrees F.
Brown your ground beef and drain off any excess grease.
Combine your ground beef, BBQ sauce and onion in a bowl.
In your muffin pan, press one biscuit into each muffin tin pushing it up on the sides and molding it to the shape of the tin.
Fill each biscuit with meat mixture.
Top each biscuit with shredded cheese.
Bake for about 12 minutes or until biscuits are golden brown.
If you have left over meat mixture, just add a little more to each cup! I was able to fill all 20 biscuits with my meat mixture. Now I have seen this recipe call for brown sugar, but I don't care for it because I think it make the meat too sweet. If you like a sweet touch though, you can add 1-2 tablespoons of brown sugar to your meat mixture.
