I am really working on limiting my carbohydrates and am trying to be creative in the kitchen so I don't get bored! Trying to use riced cauliflower in more dishes has been one of my goals. I really liked it in my Weight Watchers Cheesy Beef and Veggie Soup so I knew it would be good in other dishes. This Low Carb Sausage and Riced Cauliflower Skillet dish ended up being really tasty and is easy to adapt too!

Low Carb Sausage and Riced Cauliflower Skillet

Ingredients Needed for Low Carb Sausage and Riced Cauliflower Skillet
1 pound ground sausage (I used HOT sausage)
4 cups riced cauliflower
1 cup beef broth
salt to taste
pepper to taste
How to Make Low Carb Sausage and Riced Cauliflower Skillet
First I browned the ground sausage in a skillet on the stove. I loved the flavor of this dish using hot/spicy sausage, but that is totally up to you. Regular sausage will be great too!
I used the frozen already riced cauliflower. It was a busy evening and I was in a hurry and needed a shortcut. I steamed the bags according to the package directions.
Add the cooked cauliflower to the skillet of sausage. Pour in the beef broth and stir. If you are making your own riced cauliflower and it is not cooked—you will want to add more beef broth so the cauliflower can cook and get tender.
Lastly, add salt and pepper to the mixture to your liking and heat on low-medium heat until the mixture is well heated.

Easy Adaptions
If you are following the Weight Watchers plan it is easy to adapt this recipe and make it lower calorie. Use ground turkey sausage to lower calories. 🙂 The cauliflower is zero SmartPoints. 🙂
Low carb eaters can always half the cauliflower in this recipe or add more sausage for a higher protein count.
Easy Ways to Rice Cauliflower
It is definitely cheaper to rice your own cauliflower if time allows. If you don't have the right tools…this can be a chore though! Here are some easier ways to rice the cauliflower for this recipe.
Using a hand-held ricer is a low tech way to get the job done without taking up valuable counter space! This is also an easy way to get your kids involved, LOL.
If you want a tool that is similar to a food processor, but doesn't need to be plugged in….try the Master Slicer. It works like a food processor, but you are doing it manually and have more control.
The other great way is to use a food processor. I am in LOVE with my Ninja Intelli-Sense Kitchen System with Auto-Spiralizer. You can read more about how much I love it HERE. Any good quality food processor should do the trick though!

This was a perfect low carb meal prep that I made tonight for my dinner and a few lunches at work. So easy and delicious.
Next time I made remove the sausage after browning. Double the the cauliflower rice and broth and blend with my immersion blender. Add the sausage back for an easy low carb sausage gravy.
Great idea! Never thought of making gravy.
