Do you love Tex-Mex as much as I do? The only problem with Mexican food is that the points can really add up quickly….let's just say I have trouble stopping after a few tortilla chips, LOL. There are some easy ways to reduce points in your Mexican dishes though and this Weight Watchers Baked Chicken Fajita Tostadas recipe is proof!! I love finding awesome Weight Watchers recipes that fill that craving for Tex-Mex!
Weight Watchers Baked Chicken Fajita Tostadas
The best way to make this meal more filling is to add plenty of veggies to the tostadas. It is easy to adapt this Weight Watchers Baked Chicken Fajita Tostadas recipe for different taste buds too.
Ingredients Needed for Baked Chicken Fajita Tostadas
3 cups shredded or diced cooked chicken breast
1 packet fajita seasoning mix (you can make your own fajita seasoning mix…click HERE to get the recipe I use)
2 cups sliced red, orange, yellow bell peppers
1 medium onion thinly sliced
¼-1/2 cup water
8 Mission Estilo Casero Tostadas Shells
2 cups shredded low-fat cheese
How to Make Weight Watchers Baked Chicken Fajita Tostadas
Preheat oven to 350 degrees F.
Combine cooked chicken, seasoning mix and bell peppers and onions in pan on stove. Add water and cook until the veggies are tender.
Take out a baking pan and lay the tostada shells on it.
Cover each shell with the chicken and veggie mixture.
Sprinkle ¼ cup of shredded cheese on top. (it is important to measure the cheese out so your points are accurate)
Bake for 8-10 minutes or until cheese is melted.
You can add sour cream, guacamole, jalapenos, etc. but you will need to figure those additional points into your total.
Baked Chicken Fajita Tostadas Points
Now the good news is that if you make these just like I have them listed it will be 3 points per tostada for Blue and Purple plans and 4 points for Green myWW plan. That isn't bad for a filling tostada….you can always add lettuce to the top too! If you want to save points you can leave off the cheese!!!
I was surprised that the fajita seasoning actually has points…that is one of those things I wouldn't think to count…but I am glad I added to the recipe builder! Not counting all the ingredients is a good way to fail at Weight Watchers!
