Calling all lovers of flavor…big flavor! This Weight Watchers recipe won't disappoint you if you like big, bold flavors in your meals. If you like cooking a meal FAST in your Instant Pot then you are also in luck. I think this Weight Watchers Instant Pot Jerk Chicken Soup is going to become a new favorite!
Weight Watchers Instant Pot Jerk Chicken Soup
The taste of jerk seasoning is just YUMMY. I think it brings a lot to the plate, LOL and I figured trying it in a soup was a great idea.
Ingredients Needed for Weight Watchers Instant Pot Jerk Chicken Soup
- ¼ tsp ground all spice
- ¼ tsp ground cayenne pepper
- ½ tsp ground ginger
- ½ tsp black pepper
- 1 lbs. skinless chicken breast cut into one-inch cubes
- 1 clove garlic, minced
- 1 medium onion, chopped
- 1 can of can diced tomatoes with green chilies, drained
- 1 can of black beans, drained and rinsed
- 5 cups of fat-free chicken broth
- ½ tbsp. of salt
- Fresh lime–squeezed or
- 2 tbsp. of cilantro
How to Make Jerk Chicken Soup in the Instant Pot
First take your pressure cooker pot and combine the all spice, cayenne pepper, ginger, garlic salt, and pepper and mix the spices together.
Next add the chicken breast cubes to the spice bowl and coat the chicken in the spices.
Let the chicken sit in the bowl for around 15 minutes so it gets nice and marinated.
Go ahead and add the garlic, onion, tomatoes, black beans and chicken broth to the pot with the coated chicken cubes.
Stir everything together.
Last just set your Instant Pot to manual and set it for 15 minutes.
WW Points for Jerk Chicken Soup
Okay so when I calculate this recipe in recipe builder it comes out to a total of 1 Freestyle SmartPoint for the WHOLE POT of soup for the myWW Blue and Purple plans. They show that each serving is zero points for Blue and Purple. There are 3 points per serving for the Green plan. 🙂 It is hard to imagine that this would really be zero points….I wouldn't advise eating the whole pot, LOL unless you are planning to fail at Weight Watchers!

How do I make this in a regular pot over the stove?
I do not have an instant pot
I have not made this on the stove, but generally just add the ingredients to a big pot and cook until they are done!
