I love banana bread, but like to switch it up sometimes. That is why we rarely have just plain old banana bread at our house, LOL! I had a pile of overly ripe bananas a couple of weeks ago and instead of making my usual banana bread….I decided to try a recipe I saw over on Lovin From the Oven. It is a keeper for SURE! This Cinnamon and Sugar Banana Bread is moist and delicious and I can honestly say that my family didn't get much of it…. 😆
So if you have any ripe bananas lying around because everyone has been too busy eating Christmas candy to eat fruit….you really need to take a few minutes and make up this Cinnamon and Sugar Banana Bread! You won't regret it…but your waist line may! 🙂
Ingredients Needed for Cinnamon and Sugar Banana Bread
- 3 over-ripe bananas, smashed up
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- dash of salt
- 1 1/2 cups flour
For the Cinnamon & Sugar you will need:
- 1/3 cup of sugar
- 1 tablespoon of cinnamon
How to Make Cinnamon and Sugar Banana Bread
Preheat oven to 350 degrees F. You can butter and flour a loaf pan or just use a nonstick cooking spray. I used a 9 x 5 loaf pan, but other sizes will work too! You will just need to watch it for really closely so it doesn't cook too long!
Mix bananas, butter, sugar, egg, and vanilla together. I just threw it all into my KitchenAid mixer (and honestly…I didn't smash the bananas first…I let the KitchenAid do all the work, LOL!) and mixed it up until well blended. Then you will sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. You want to be careful not to over-mix.
Now in a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon for your cinnamon and sugar mixture!
It is time to add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top. It will seem like a LOT of cinnamon and sugar…BUT don't worry…it isn't too much! 🙂 Because honestly…can you ever have too much cinnamon and sugar???
Last step is to bake for 50-60 minutes. Check on it when you get close to the 50 minute mark…it will be done when you stick a toothpick into the center and it comes out clean. You don't want to overcook it…you want it to be nice and moist!
