Greek Tortellini Pasta Salad will leave you wanting more. It has that crisp texture with the tangy feta cheese and not to mention that zesty flavor from the dressing. Give it a try and enjoy the perfect mix of simplicity and deliciousness!

WHAT KIND OF TORTELLINI WORKS BEST IN THIS RECIPE?
It's preferable to choose tortellini that doesn't go too mushy and stays firmly to mixing when preparing pasta salad. Below are a few excellent options:
CHEESE TORTELLINI
This was used in this recipe, it is a common option because of its subtle and creamy taste. It definitely balances the flavors of the pasta salad.
CHICKEN OR SAUSAGE
These kinds provide more protein and a savory taste to a healthier salad, which can increase its overall fullness and flavor.
SPINACH AND CHEESE
This will give the dish just a hint of color and a little spinach taste that goes well with the crunchy veggies and zesty feta.

CAN I MAKE THIS PASTA SALAD AHEAD OF TIME?
I would absolutely be possible to make this ahead of time. There are just a couple of things you need to adjust for it to stay fresh. One would be the cook of the tortellini, it would be best if it was slightly al dente. This will ensure that it doesn't go too soft.
If ever you plan to make this ahead of time be sure not to add the dressing just yet. Separating this will help maintain the freshness of the ingredients. Lastly, add the herbs and feta cheese when you are ready to serve it. Don't forget to store them in an airtight container in the fridge before mixing them together.
