WHY COOK WITH AN AIR FRYER?

The air fryer is one of my favorite kitchen tools for cooking vegetables. It is easy to get veggies cooked so they come out tender, yet slightly crispy with a roasted veggie taste.

The air fryer doesn't require the use of very much oil but you still get a wonderful result. A small amount of olive or avocado oil is a great way to get that healthy fat needed in tiny amounts.

I have also found the air fryer to cook my veggies much quicker than if I am roasting them in the oven.

WHY USE NEW POTATOES?

Cooking with new potatoes is a convenience for me. They are small and don't take as long to cook.

The skin on the new potatoes is thinner than russet potatoes and I can leave it on without the need to peel them.

I love the bags of new potatoes that include small purple potatoes too. They add some color to my cooking.

INGREDIENTS FOR POTATOES AND GREEN BEANS

I love simple recipes that don't require a lot of ingredients. This is a fuss-free air fryer potatoes and green beans recipe.

  • New Potatoes
  • Fresh Green Beans
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Non-aerosol olive oil

HOW TO MAKE AIR FRYER POTATOES AND GREEN BEANS

Making Air Fryer Potatoes and Green Beans is simple and it is a side dish that goes well with almost any main dish protein.

STEP ONE: PREPARE VEGGIES

Start off by washing the new potatoes and green beans.

Cut the new potatoes in half or quarters so that the pieces are close to the same size. This will help with even cooking.

Trim the ends off the green beans.

STEP TWO: AIR FRY

Spray the basket lightly with non-aerosol olive oil.

Add the new potatoes to the basket. Lightly spray the potatoes with non-aerosol olive oil and then sprinkle with salt and pepper, to taste. Shake the basket a little to coat the potatoes.

Depending on what size basket you have you may need to cook this in batches.

Air fry at 390 degrees F for 10 minutes.

Open air fryer, shake the basket and add in the green beans. Lightly spray the green beans and potatoes with olive oil and sprinkle with more salt and pepper, to taste.

Air fry for 8 to 12 more minutes or until the potatoes are fork-tender and starting to brown. I like the green beans to be starting to blister, but this is a personal preference.

Add more time to get the potatoes crispier, if desired. You could also serve these air fryer potatoes and green beans as a side with country style ribs in an air fryer.

TIPS FOR SUCCESS

It is important to add the green beans about 1/2 way through the cooking cycle or they will burn and overcook!

The green beans cook much quicker than the potatoes in the air fryer.

My favorite olive oil spray is the Pam Spray Pump Olive Oil or Avocado Oil.
