Weight Watchers Stuffed Tomatoes are a low point appetizer, snack or side dish that you will fall in love with. This is going to be a favorite Weight Watchers recipe for sure because who doesn't love a cheesy guilt-free snack?

WHAT KIND OF TOMATOES WORK BEST?
These WW Stuffed Tomatoes are made with grape tomatoes.
Grape tomatoes are small oblong tomatoes that resemble grapes in their size and shape. They aren't as sweet as cherry tomatoes and are a little bit meatier.
This recipe uses grape tomatoes because they are bite-size and we are stuffing them with a small bit of cheese.
I haven't tried this with cherry tomatoes, but I think they would work well. You may need to modify the recipe a little bit because there may need to be extra cheese added to a cherry tomato since they are bigger.
Both types of tomatoes are zero points so that shouldn't matter!

WHAT IS BALSAMIC VINEGAR?
Balsamic vinegar is a very dark, concentrated vinegar. It originated in Italy and I can say that high-quality Italian balsamic vinegar is amazing!
I was in Florence a few years ago and we visited some wineries that made their own and it was so, so good!
Luckily it is easy to get good quality balsamic vinegar all over the world thanks to shipping.
There is a big difference between balsamic vinegar and red wine vinegar. Balsamic is much thicker and is also sweeter. It is more of a syrup.
A good balsamic vinegar has the perfect balance of sweetness to acidity. It doesn't take much to add so much flavor to foods.
INGREDIENTS FOR WW STUFFED TOMATOES
The ingredient list if fairly short for this delicious WW appetizer recipe. I like to keep things easy!!
- Grape tomatoes
- Light Mozzarella string cheese sticks
- Extra virgin olive oil
- Balsamic Vinegar
- Salt
- Black pepper
- Garlic powder
- Onion powder

HOW TO MAKE WW CHEESY TOMATOES
If you love mozzarella cheese and foods that have an Italian flair, I think you will love these bite-size snacks. I love how easy these are to throw together!

STEP ONE: PREPARE TOMATOES
Start off by preheating the oven to 375°F.
Now wash the tomatoes and cut off a small piece of the tomato from the stem side.
You need to remove the seeds and juice from inside each grape tomato. This can be accomplished by gently squeezing the tomato or using a small knife or spoon to scoop them out.

STEP TWO: CUT CHEESE
Unwrap the string cheese sticks and cut each stick into 6 pieces. You want one small piece for every tomato.

STEP THREE: STUFF TOMATOES
Now stuff the cheese pieces into the tomatoes. Some of the tomatoes may be smaller and you might need to trim the cheese down a little bit to make it fit.
Cut a little sliver off the bottom of each stuffed tomato so that it has a flat bottom and will stand up.
Place the stuffed tomatoes into a baking dish. It is fine if they are touching each other. That will help them stand up better.

STEP FOUR: DRIZZLE
Now that the tomatoes are in the baking dish it is time to season them!
Drizzle the olive oil and balsamic vinegar lightly over the tomatoes.
In a small bowl, combine the salt, black pepper, garlic powder and onion powder. Stir to combine.
Sprinkle the seasoning mix over the top of the tomatoes.

STEP FIVE: BAKE
Place the baking dish in the preheated oven.
Bake for 5-7 minutes or until the cheese starts to melt and the tomatoes start to blister.

This is a point-friendly WW recipe.
The recipe makes 30 stuffed tomatoes. A serving is 2 tomatoes.
There is only 1 point per serving on all 3 myWW plans.
On the current WeightWatchers Program (2023) it is 1 point per serving.

These cheesy Weight Watchers Stuffed Tomatoes are a delicious and point-friendly appetizer or side dish.
- 30 grape tomatoes
- 5 light mozzarella string cheese sticks
- 1 Tbsp extra virgin olive oil
- 1 1/2 Tbsp balsamic vinegar
- ¼ tsp salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ¼ tsp onion powder

Preheat oven to 375° F.

Wash tomatoes and cut off a small piece of tomatoes, stem-side.

Using a small knife, spoon or even your finger, take out seeds and juice. Discard.

Cut cheese sticks into 6 pieces. You may need to cut smaller or in half to fit in the smaller tomatoes. Stuff one cheese piece into each grape tomato.

Cut of a little sliver of the bottom to give it a flat bottom to stand.

Place each stuffed tomato into a baking dish.

Using a small spoon, drizzle a little olive oil onto each tomato. Do the same with the balsamic vinegar.

Combine the salt, pepper, garlic powder and onion powder in a small bowl and stir to combine. Sprinkle the seasoning mixture evenly over each tomato.

Bake for 5-7 minutes, until cheese starts to melt and tomatoes start to blister.
Each serving is 2 stuffed tomatoes.
There is 1 point for each serving on blue, green and purple myWW plans.
