I love muffins with fresh fruit inside and saw some plump and amazing raspberries at Walmart on my recent grocery run and knew they would make great Raspberry Cream Cheese Muffins!
Ingredients Needed for Raspberry Cream Cheese Muffins
3 cups flour all-purpose white flour
1 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup (1 stick) butter, softened
2 eggs
1 cup milk
1 1/2 teaspoons vanilla
2 cups fresh raspberries
4 ounces softened cream cheese
2 1/2 tablespoons sugar
Sparkling sugar, for sprinkling on top if desired
How to Make Raspberry Cream Cheese Muffins
Start out by preheating your oven to 400 degrees F.
Get out your muffin pan and line your muffin cups. This recipe makes approximately 18 regular sized muffins.
In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
Next you will work in the softened butter with your electric mixer. The mixture will sort of resemble coarse sand.
Now you will blend in the eggs, milk, and vanilla until all ingredients are combined, but being careful not to overbeat the mixture.
Now you will gently fold in the raspberries.
For the cream cheese component you need to mix together softened cream cheese and 2 1/2 tablespoons sugar in a small bowl until smooth and blended. Just keep this mixture off to the side for now.
Take your muffin batter and scoop a generous tablespoon of batter into each muffin cup. You want there to be just enough that the bottom of each muffin liner is covered.
Now add about a teaspoon of cream cheese mixture to the center of each muffin cup.
Add another spoonful of batter on top of the cream cheese mixture in your muffin cup.
If you want to dress your Raspberry Cream Cheese Muffins up a little you can sprinkle the top of each muffin with sparkling sugar.
Bake the muffins for 20 to 25 minutes or until muffins test done with a toothpick.
I Am a Messy Muffin Maker
I have to say that while I was making these muffins I did what I always do….and got muffin batter all over the place!
It makes my muffin pan a real pain to clean up….not to mention how old my pan is!! Luckily I picked up the new Scotch-Brite® Scrubbing Dish Cloths at Walmart while I was shopping!
These come in 2 packs and I got this cute coral color, but they are also available in tan or navy and are only $4.98 at Walmart. I love that these Scotch-Brite® Scrubbing Dish Cloths are fully washable, reusable and sturdy….good enough to get my dirty muffin pan clean for sure!! My muffin pan used to be “nonstick” but it wouldn't matter because these Scotch-Brite® Scrubbing Dish Cloths will not scratch any surface….they scrub, but don't scratch!
While I was waiting on my muffins to bake I noticed some of my cabinets were STICKY….looks like one of my little blessings spilled something and did a poor job of cleaning it up. 🙁 I decided to do some cabinet cleaning while I waited to take my muffins out of the oven! Here is a picture of just how bad the cabinet was!! Here is my trick for cleaning dirty, sticky cabinets!
How to Clean Sticky Kitchen Cabinets
Take 2 cups warm water and add in 1/2 teaspoon of your favorite grease fighting dish soap plus 1/4 cup of distilled white vinegar.
Now take the cleaning cloth….I used my new Scotch-Brite® Scrubbing Dish Cloth….and dipped it into the liquid and started scrubbing my cabinet. Be sure to scrub the cabinet along the grain of wood.
Once you are satisfied with the cleanliness of your cabinet door…be sure to dry it off good with a dry towel.
This is a quick and easy way to get rid of sticky, yucky cabinet doors. It always amazes me how dirty our kitchen cabinets can get! I loved how the Scotch-Brite® Scrubbing Dish Cloth had the scrubbing dots on one side that gave me the scrubbing power to make it quicker and easier to clean my dirty cabinets!
