These make beautiful appetizers for social gatherings. They are also a perfect main dish recipe.

INGREDIENTS FOR WW CAJUN SHRIMP CUPS

It is easy to double or triple this recipe if you need a large quantity of Weight Watchers Cajun Shrimp Cups!

  • Nasoya Egg Roll Wraps (wonton wraps also work)
  • Olive Oil Spray
  • Cajun Seasoning
  • Large Peeled and Deveined Shrimp
  • Lime
  • Baby Spinach Leaves
  • Light Sour Cream

HOW TO MAKE WEIGHT WATCHERS CAJUN SHRIMP CUPS

This Weight Watchers Cajun Shrimp Cups recipe is fairly quick and easy to make. You can get most of the steps done while the shrimp are cooking!

STEP ONE: BAKE EGGROLL WRAPPERS

Preheat the oven to 350 degrees F.

Cut each eggroll wrapper into four equal square pieces.

Place each eggroll wrapper square into a mini muffin pan cup and press it down into the bottom of the cup. Push the sides up and push the corners down to form a little cup.

Spray the wraps lightly with nonstick Olive Oil spray to crisp up while baking.

Bake the wrappers for about 8 minutes or until lightly browned. Remove from oven and cool on a wire rack.

STEP TWO: COOK SHRIMP

While the eggroll wrappers are cooking, start working on the shrimp!

Start off by zesting a whole lime. Divide the zest into two equal portions and set one portion aside for later. 

Combine the Cajun seasoning, 1/2 the lime zest, and shrimp in a small bowl. Coat the shrimp well in the seasoning mix and lay them on a baking sheet.

When the eggroll wrappers come out of the oven, go ahead and bake the shrimp for 8-10 minutes or until the shrimp are cooked through.

STEP THREE: MAKE THE SOUR CREAM MIXTURE

Take the zested lime and squeeze out the fresh lime juice.

While the shrimp are cooking, go ahead and mix the sour cream, lime juice, and the rest of the lime zest together in a small bowl.

STEP FOUR: BUILD THE SHRIMP CUPS

Now it is time to build the Cajun Shrimp Cups.

Place 1-2 baby spinach leaves in the bottom of each eggroll wrapper cup. Top with a small drop of the sour cream mixture and end with one shrimp.

Ingredients
  • 4 Egg roll wrappers cut into 4 I used Nasoya Egg Roll wraps which are 3 wrappers for 5 Freestyle SmartPoints.
  • Nonstick Olive oil spray
  • 1 Tbsp Cajun Seasoning
  • 12 large shrimp peeled and deveined
  • 1 lime
  • 24 Baby spinach leaves
  • 3 tablespoons light sour cream
  • 1 teaspoon fresh lime juice
Instructions
  1. Heat oven to 350 degrees F.
  2. Using a mini muffin pan, press the eggroll wrappers down into the cups. Make sure they go to the bottom of the pan and then push back the corners to form a little cup. 

  3. Lightly spray the wrappers with nonstick olive oil cooking spray before baking.

  4. Cook for 8 mins until browned. Cool on wire rack.
  5. Zest a whole lime and divide equally. Set one half aside for later.

  6. Mix the Cajun seasoning, shrimp and 1/2 the lime zest in a small mixing bowl. Once well coated lay out on a baking sheet and bake for 8-10 minutes until shrimp are cooked through.

  7. Squeeze the zested lime to get the 1 tsp of lime juice.

  8. In a small bowl, stir the sour cream, lime juice, and the other half of the zest together.

  9. Place 1-2 baby spinach leaves in each wonton cup. Add a small dollop of the sour cream mixture in each cup and top with a single cooked shrimp.
