Cajun Breakfast Cups

Spring is in the air and light fresh foods are on the menu!  How about a recipe that is wonderful for breakfast, lunch or dinner and can be made up ahead of time?  These Cajun Breakfast Cups can be enjoyed anytime of day.  It is easy to warm up the leftovers for a quick, healthy snack too.  Did I mention that these are packed with yum and only have 5 ingredients?

I have had a little love affair going on with Cajun seasoning the past few years.  You can ask my family if you don’t believe me….I sprinkle Cajun seasoning on a LOT of food.  Sometimes I even purposefully create recipes that I can turn Cajun, LOL.  

I like to make the Cajun Breakfast Cups in muffins tins.  It helps me keep better portion control and they are cute!  I don’t use muffin liners because the breakfast cups don’t seem to get as crispy.

Keeping it Clean

The only drawback I find to cooking (besides eating too much, lol) is the cleaning up afterwards.  Since I don’t have a personal housekeeper and I do a large majority of the clean up myself….I am sure to use the right tools to make the job easier.

I can really think outside the box when I use the green Scotch-Brite® Heavy Duty Scrub Sponge.  It works on pots, pans, oven racks, grill racks, tools, tires and sinks.

Ingredients Needed for Cajun Breakfast Cups

20 ounces of hash browns thawed 

2 cups of diced ham

12 eggs

2 cups of shredded cheese

3 teaspoons Cajun seasoning

How to Make Cajun Breakfast Cups

Preheat your oven to 400 degrees F. 

Spray 24 muffins pans with non stick cooking spray.

Combine all the ingredients into a large mixing bowl.  I just mixed mine with my stand mixer for about a minute until ingredients were well combined.  You could also mix by hand if you prefer.

Pour mixture into muffins cups filling about 3/4 of the way.  

Bake for 20-30 minutes or until a toothpick comes out clean!  I like mine to start to brown nicely on the top too. 

Store any leftover Cajun Breakfast Cups in the refrigerator.

Clean Up is a Breeze

You can see by the picture below that I am a tad bit messy when it comes to cooking with muffin tins. I was actually trying to be CAREFUL when I poured the mixture into the muffin cups too!!!  🙂

Thank goodness it was a breeze to clean this muffin pan with my Scotch-Brite® Non-Scratch Scrub Sponge!  I don’t have to spend extra time trying to be super tidy anymore!! I always grab these handy sponges when I am getting my groceries at Walmart.

    1. I haven’t tried freezing them….they don’t last long enough, LOL. I would think they would do okay though. Let me know if you try it and how it goes!

      1. Use tasso if you can find it. It’s a Cajun ‘ham’ made from shoulder meat rather than leg meat. It’s got so much flavor! It would be terrific in this. I, too, want to know if these can be frozen.

  1. Could muffin tin liners be used? I use the ones made from parchment, but was wondering how they’d do when peeling the liner off.
