I don't think I have kept it a secret on my blog that I like easy meals! 🙂 Roasted Sausage and Vegetables falls into the “easy meals” category!
I also love meals that have all the veggies in the dish…that is one less pan I have to dirty up while making dinner! This dish is so easy to make and can be very versatile also!
You can really change-up what veggies you use in this dish based on what you have on hand or what is in season. I can be kind of picky when it comes to vegetables so I keep it kind of boring…but you don't have to!
I typically always use potatoes because I just LOVE potatoes! I have used good old russet potatoes, small red potatoes…really any kind will be good in this dinner.
I almost always have carrots on hand in the fridge so those are a must have for me. Roasted Sausage and Vegetables just wouldn't be the same for me without carrots!
Those are my two staple veggies for this dish. Next I will use sliced bell peppers if I have some on hand. I have also recently started using a jar of banana pepper rings. Those bring a really nice tangy flavor to the dish that I think is great! I don't use the juice in the jar…just the mild banana peppers!
The sausage can be any kind of link sausage that is fully cooked. I have used all beef, pork, etc. Usually I will get whatever is on sale.
The easiest way I have found to make this meal is to dice up all my veggies and throw them in a gallon size Ziploc bag. I add my olive oil, salt, pepper and some garlic if you like garlic. Then I just mix it all around by kind of shaking and smushing the bag all around. This coats all the vegetables really well.
This works best if you cook the vegetables over half way before adding the sliced sausage in. Otherwise your sausage will get a little too cooked and will be dry.
The cooking time also will vary based on how you like your vegetables cooked. I like my veggies nice and soft and well done on the outside. So, I cook mine for quite a while. If you like a crunch to your veggies you can limit your cooking time!
I always line my pan with non-stick foil to make for an easier clean up! You can also use regular foil and spray it with nonstick cooking spray!
Roasted Sausage and Vegetables is a quick and easy weeknight meal! If you have kids that can help chop up veggies, put them to work because that is the only thing about this recipe that takes any effort!

Roasted sausage and veggies is a quick and easy meal that is all made in one pan!
- 1 package Smoked Sausage of your choice
- 16 oz baby carrots
- 4 medium russet potatoes cleaned and cut up into bite size pieces
- 2 medium bell peppers cleaned and sliced
- 4 Tablespoons Olive oil
- 1 teaspoon minced garlic
- Salt and Pepper to taste

Preheat oven to 400 degrees F.

Clean and cut up all your vegetables into bite size pieces.

Place all veggies into gallon size Ziploc bag. Add oil, salt, pepper and garlic to bag.

Close bag and shake bag and move it around until all veggies are coated with oil and spices to your liking.

On a large jelly roll pan covered in foil, dump out all veggies into a single layer.

Bake vegetables for about 20-25 minutes. Take veggies out of the oven, add sausage to the pan and stir the vegetables and sausage around, leaving them in an even layer.

Return pan to the oven and bake for another 20-30 minutes depending on how you like your vegetables cooked. When the vegetables are cooked to your satisfaction, take out of oven and enjoy!
You can use almost any vegetable that you like in this dish. Cauliflower, broccoli, zucchini, etc. all will work great! Just remember that some vegetables take longer to cook. If you use broccoli, you may want to wait and add it when you add the sausage so that it doesn't get burnt.
You can use any oil that you prefer. I usually add about a Tablespoon of oil per pound of veggies. You want them to have a nice coat of oil so that they roast well and get that nice crispy roasted taste!
You can also add whatever spices you like to this dish! It is very easy to customize for your preferences!

Our freezer is currently chock-full of deer sausage. Good lord, how will I ever use it all? My husband’s dad gives us some every time he sees us. Thanks for the idea. 🙂
