My latest yum yum are the Weight Watchers 2 Ingredient Dough Turkey and Cheese Pockets! The discovery of Weight Watchers 2 ingredient dough was a real game changer for me and so many others! It is such a versatile dough and the low points make it just fabulous! I am making some delicious Weight Watchers recipes using the 2 ingredient dough and I don't feel deprived at all!

I can't decide if these 2 ingredient dough turkey and cheese pockets are my favorite or if it is the Weight Watchers pigs in blankets that I make using the 2 ingredient dough! I guess it just depends on the day and which one I love more, LOL!
How to Make Weight Watchers 2 Ingredient Dough Turkey and Cheese Pockets
I have found that the key to success with the 2 ingredient dough is to make it in my stand mixer.
- Preheat the oven to 375 degrees F.
- Put the self-rising flour and the greek yogurt into the mixer bowl.
- Mix until well combined using a dough hook

- On a surface that has been dusted with a little flour…divide the dough into four equal sections.
- Flatten each portion of dough into an oval or square shape. I don't try for pretty….My goal is for the dough to be flat. 🙂

Stuff the Turkey and Cheese Pockets
I used Velveeta slices in my turkey and cheese pockets. You can use any cheese you want…but you will need to count it! 😆
I like how the Velveeta cheese melts…and one slice is only 1 point! I used 1/2 a slice in each pocket.

Then I added some shredded turkey breast that was zero points.

Next just fold the dough over and make a pocket. I used a fork to close the sides together nicely.

Place the pockets on a baking pan that has been sprayed with nonstick cooking spray

I brushed my pockets with an egg wash.
Bake for approximately 15 minutes or until golden brown.

WEIGHT WATCHERS POINTS
The dough is 12 freestyle smartpoints total. The Velveeta sliced cheese is 1 Freestyle SmartPoint per slice. If you can find the 0-point sliced turkey breast, that will be awesome! Otherwise, you may have 1 point from the turkey.
These can be made as low as 3.5 Freestyle SmartPoints each if you use zero-point turkey. 🙂 🙂 🙂 These pockets are pretty filling too! They make a great lunch. I am always looking for easy lunch ideas.
On the current Weight Watchers Program (2023), it is 4 points per pocket.

Can the dough be made without a mixer and still come out good
Yes it is just a little more work because it is sticky. The first time I made these without using my mixer and they tasted fine.
Can these be frozen or reheated after baked?
They never last long enough for me to try it..but if you try to freeze them let us know how it turns out!

I was thinking of these to food prep for the week.
If I do try to freeze, should I bake them first, then freeze, or freeze unbaked?
I have not tried freezing these, but I would think it would be easiest to go ahead and cook them and then reheat during the week. Let me know how you end up doing it and the results!
Yeah tried using King Arthur whole wheat flour. Not good. Must use regular self rising!

Add two teaspoons fresh baking soda and the cme out fine.
Made these and they were good added garlic powder to the dough. Next time think I will use a little less yogurt or more flour the dough sticky hard to work with. I love this dough. So then I started thinking ways Italian or Mexican lots of ways. Just use your imagination and count the piunts.
Did anyone ever try freezing them and reheating? I think I’m going to give it a shot this week!
