For some reason lunch can really cause me to stumble when I am on Weight Watchers. I have to be EXTRA careful not to get lured into eating out because I don't take my lunch with me to work. Time is usually short in the mornings and I need quick and easy no cook lunch ideas for Weight Watchers to get me through the day. Here are some ideas I have come up with to save me time.
Easy No Cook Lunch Ideas for Weight Watchers
I will be honest and say that sandwiches don't usually excite me…but some days that is what's for lunch, LOL. Now that I have found high fiber bread that is low in points…I am more excited about eating a sandwich.
The good thing about a sandwich is that it is filling and low in SmartPoints. I can add plenty of turkey, some mustard, veggies…and it doesn't cost me a lot of points.
I find that eating a wrap (which is a close cousin to the sandwich, LOL) makes me happier than eating a sandwich. Low carb/high fiber tortillas make wraps a low points choice too. I think it is easier to add more veggies to a wrap as well.
Wraps are also easy to make up the night before! I don't like making sandwiches the night before because the bread always seems hard to me the next day, but I don't have that issue with wraps.
Some days I will just eat finger foods for lunch. I will take almonds, veggies, fruit and a cheese stick and that will be it. This is a no cook way to have lunch and it is a nice change of pace.
I think of taco salads as a cold dish. Taco meat in a little tub with some lettuce, salsa, crunched up tortilla chips and I am set! This is an easy way to use up leftover taco meat too.
Be sure to use ground turkey for your taco meat to save some SmartPoints.
Cereal and Fruit
Cereal doesn't have to be just a breakfast food. Grab a bowl of high fiber, healthy cereal and some milk for lunch. Add some fruit and you are set!!
Lunch-to-Go Tuna Salad or Chicken Salad Kit
These kits are great to keep on hand at work in case you forget to bring your lunch you have something to eat. They are okay on points and you can add some fruit and veggies to the kit to make it more of a meal!
Cottage Cheese & Fruit
Cottage cheese is a filling food for me and makes a great quick no cook lunch. I pair it with some fruit and maybe even some veggies and pita chips for a satisfying meal.
Chicken Breast & Salad
How about a leftover grilled chicken breast cut up in a big salad? This will make a nice big lunch and will be low in SmartPoints.
