WHY EAT EGGPLANT?
I love the color of eggplants…that deep shade of purple. There are other reasons to love eggplant though…they are full of great healthy nutrients.
A fiber filled veggie that is low in calories. Eggplant also contains copper, manganese, thiamine, antioxidants and B-6.
It is also nice to change up our vegetable side dishes and add something new that we may not eat often.

INGREDIENTS IN AIR FRYER EGGPLANT
I love simple recipes and this one requires very few ingredients. It is amazing how the right combination of spices can bring so much flavor to the food.
- Eggplant, sliced into ¼-inch rounds
- Garlic Powder
- Chili Powder
- Dried Oregano
- Salt
- Olive Oil

HOW TO MAKE AIR FRYER EGGPLANT CHIPS
Making veggies in the air fryer is my favorite way to cook vegetables. They come out so good and the flavors are just wonderful.
STEP ONE: MIX SPICES
Mix together the garlic powder, chili powder, oregano, and salt in a small bowl.
STEP TWO: COAT EGGPLANT
In a large bowl, add the eggplant slices, olive oil, and the prepared spice mix.
Toss well to coat each eggplant slice with the spice mix and the oil.

STEP THREE: AIR FRY
Lightly spray the air fryer basket with olive oil spray.
Arrange the eggplant slices in a single layer in the air fryer basket.
Air fry at 330° F for 20 to 25 minutes, flipping the eggplant slices once, till they are slightly crispy.
Depending on the size of your air fryer you may need to cook these in batches.

STEP FOUR: COOL
Place the eggplant slices on a wire rack to cool down. They will continue to crisp up as they cool down.

MORE SPICE IDEAS
There are unlimited spice options when it comes to adding flavor to veggies.
You need about 2 teaspooons of spice for one large eggplant.
Here are some more ideas to change things up!
- Just salt and pepper
- Curry Powder + paprika
- Grated parmesan cheese + Italian Seasoning

WW POINTS
If you are following the WW plan these Air Fryer Eggplant Chips are a great snack or side dish.
The recipe calls for 1 tablespoon of olive oil and I do suggest using that amount to get a nice crispy chip.
